HEALTHY DRY FRUIT CAKE Try something healthy for Christmas!!! No butter, no eggs, no maida, no white sugar! This fruit cake is prepared using palm sugar, cold pressed virgin coconut oil & wheat flour.  You can use extra virgin olive oil too instead of coconut oil.  Palm sugar is a healthy alternative to regular white cane sugar as it does not go through any chemical process and also retains most of its nutritional benefits. CHILLI CHICKEN This dish is one of the most loved dishes in my family.   It is an Indo - Chinese dish which is loaded with flavours. This spicy, tangy, slightly sweet dish is usually prepared using boneless chicken but we love bone-in chicken.  This could be the best choice for an appetizer or a side dish with any meal.  Step by step recipe is mentioned below. Quick Cup Cake in Air Fryer

CUPCAKE This super moist & delicious cake is prepared in air fryer.  Turned out very tasty & baked just in 12 minutes at 140°C. The basket of air fryer is small. So I have done in small quantity using only 4 idli moulds to prepare this cake.  This also can be done using any ovenproof dish , moulds or cups.  I have also used disposable aluminium container to bake excess batter.  Please note: Make sure , there is enough space for air circulation in the air fryer. CRISPY VADA

Crispy vada with chutney & sambar Vada is a South Indian  delicacy made with ground urad dal in a doughnut shape & deep fried.  It is crispy from outside & soft inside.  Here is a perfect restaurant style vada recipe, which serves you super crispy vadas.  Recipe: Ingredients needed: 1 cup urad dal ( 200 gms) 2 tbsp raw rice Pinch of baking soda Salt to taste.  Few curry leaves.  Oil for frying Method: Step 1 Soak 1 cup washed urad dal for minimum 2 hours.  Step 2: Dry roast 2 tbsp raw rice for 2 minutes on a medium fame.  Step 3 Grind soaked dal with roasted rice to fine thick paste. HOMEMADE GHEE There are many, many benefits of consuming pure home-made ghee. If you consume pure home-made ghee on a regular basis, it will boost your mental as well as physical strength. This will help in keeping your body fit and fighting off illnesses. Besides this, ghee is also known as a body cleanser as it removes impurities from your body. It strengthens your eyesight, your muscles and tendons. Ghee is expensive but can be prepared easily at home  free of cost with cream collected from milk on daily basis.   Here is a very easy method of preparing ghee at home.  All you need is: 1.   RICH DRY FRUIT RUM CAKE This is a very easy rich dry fruits rum cake, which turns out perfect everytime & is my family's favourite Christmas cake. This  super rich , tasty cake  needs no soaking of dry fruits and any pre-planning. I prepare this almost every month.  You can add any of your favourite dry fruits. I have used dates, tutti frutti, raisins, almonds and cashew nuts .
