Healthy dry fruit Christmas cake
No butter, no eggs, no maida, no white sugar!
This fruit cake is prepared using palm sugar, cold pressed virgin coconut oil & wheat flour. You can use extra virgin olive oil too instead of coconut oil.
Palm sugar is a healthy alternative to regular white cane sugar as it does not go through any chemical process and also retains most of its nutritional benefits. It is a better source of vitamins & minerals and contains less glucose compared to regular white sugar.
Cold pressed coconut oil has healthy fatty acids to boost heart health.
Recipe:
Ingredients needed:
I have taken 200 ml cup for measurements.
A
- 1 cup palm sugar or jaggery
- 1 cup cold pressed virgin coconut oil
- 1 cup hung curds or thick curds
- 6 drops of vanilla essence
- 2 tbsp sugar caramel
- Pinch of salt
B
- 1 cup wheat flour
- 2 tsp coco powder
- 1 tsp mixed spice powder
- 1/2 tsp baking powder
- Pinch of baking soda
C
- 300 gms mixed dry fruits
- 1 tsp orange peel+ lemon zest
- 100 ml fresh orange juice
- 2 tbsp wheat flour
Method:
Step 1:
Chop required quantity dry fruits, add orange peel & lemon zest. Add orange juice & leave for 1 hour. After one hour, dust it with wheat flour & keep aside.

Pour in a greased baking tin. Bake in a pre heated oven at 180°C for 35-40 minutes. Insert a skewer and if it comes out clean then cake is baked perfectly.
Cool & cut into desired pieces.
