Rich dry fruit Rum cake
RICH DRY FRUIT RUM CAKE
This is a very easy rich dry fruits rum cake, which turns out perfect everytime & is my family's favourite Christmas cake.
This super rich , tasty cake needs no soaking of dry fruits and any pre-planning. I prepare this almost every month.
You can add any of your favourite dry fruits. I have used dates, tutti frutti, raisins, almonds and cashewnuts.
Recipe:
Ingredients:
A
- 100 gms unsalted butter
- 100 gms organic brown sugar/ white sugar
- 4 eggs
- Pinch of salt
- 1 tsp vanilla essence
- 1tsp mixed fruit essence
B
- 100 gms all purpose flour
- 1 tbsp coco powder
- 1/2 tsp baking powder
- 1/2 tsp mixed spice powder*
- Pinch of baking soda
C
- 250 gms of chopped mixed dry fruits
- 1tsp lemon zest
- 1tsp orange peel
- 2tbsp Rum
- 2tbsp all purpose flour

METHOD:
STEP 1
Prepare sugar Caramel. Heat 2 tbsp sugar with 1 tbsp water . Boil till you get dark brown smokey liquid. Slightly cool & add 2 tbsp water & boil again. Cool & keep aside.
STEP 2
Chop required quantity dry fruits. Add lemon zest, orange peel, 2 tbsp rum & mix well. Keep aside for 5 minutes.
Add 2 tbsp all purpose flour & mix well & keep aside.
STEP 3:
Add all the ingredients mentioned under A to a large bowl & mix well with a whisk till sugar dissolves completely.

Sieve all the ingredients mentioned under B.
STEP 6:

Mix well till you get creamy consistency. Add dry fruits.
Gently fold in the mixture.
STEP 8
Grease the cake tin with little butter. Pour the mixture. Bake in a preheated oven for 30-35 minutes at 180°C. Insert a skewer & if it comes out clean, then your cake is baked perfectly.
Remove from oven & cool completely.

DeleteWhat is mixed fruit essence and where do you get it?
ReplyDeleteYou can find it in any supermarket. We get in Nilgiris in Mangalore. You can use orage essence instead.
