CRISPY VADA

Crispy vada with chutney & sambar

Vada is a South Indian  delicacy made with ground urad dal in a doughnut shape & deep fried.  It is crispy from outside & soft inside. 

Here is a perfect restaurant style vada recipe, which serves you super crispy vadas. 

Recipe:

Ingredients needed:

  • 1 cup urad dal ( 200 gms)
  • 2 tbsp raw rice
  • Pinch of baking soda
  • Salt to taste. 
  • Few curry leaves. 
  • Oil for frying

Method:

Step 1

Soak 1 cup washed urad dal for minimum 2 hours. 

Step 2:

Dry roast 2 tbsp raw rice for 2 minutes on a medium fame. 

Step 3

Grind soaked dal with roasted rice to fine thick paste. You can add 2-3 tbsp water for grinding. 

Step 4:

Add few chopped curry leaves & pinch of baking soda & salt & mix well and keep aside for 10 minutes.

Step 5:

Heat oil. Dip your palm in water, take required size batter. Make a round ball & press in the centre with your thumb as shown in picture.( use only one hand). Gently leave in hot oil & fry on a medium flame till golden brown. 

Step 6:

Remove on an absorbent paper. 

Step 7

Serve with coconut chutney and Sambar. 
Delicious , crispy vadas are ready.
