DELICIOUS 5 IN ONE

SANNA/IDLI One batter with just 4 ingredients  is used to make 5 different items. Isn't it interesting??  You can prepare, SANNA/IDLI PLAIN DOSA CRISPY DOSA ONION DOSA PURNA SANNA( Adding jaggry coconut & cardamom powder mixture to the batter) RECIPE: I have used 200 ml cup for measurement. Ingredients: 1 cup dosa rice, 1/4 cup udad daal,  handful of poha.  1/4 tsp yeast. Salt & sugar to taste Method: Just soak dal & rice for minimum 2 hours & grind to fine paste along with poha. Let the batter be slightly thicker than dosa batter.   Add  1/4 tsp yeast, mix well & ferment overnight.   Next day add salt & sugar as needed and prepare these dishes as per your choice.  You can add salt & 1 tsp sugar while fermenting if you are not keeping it overnight.  You can make appe too with this batter. Please note: While making sannas , don't allow the batter to ferment fully. You have to start preparing sannas when the batter starts rising up.  Crispy

Tulu style chicken curry Tulu Nadu region is famous for its spicy, aromatic meat & fish curries. People here love spicy coconut based gravies.  This Coconut based chicken curry is one of the iconic dishes of Tulu Nadu. This delectable chicken gravy flavoured with aromatic roasted spices and coconut is best enjoyed with mangalorean special super soft sannas, appams, neeru dosa or can be served with plain rice.  Please note:Use spices as per your requirements.  RECIPE: For 1 kg chicken  INGREDIENTS FOR MASALA: A 1 -2 Cups of coconut 1 large sliced onion 6-8 garlic flakes B 7-8 Kashmiri red  chillies 2-3 red short chillies (guntur) 1 tbsp coriander seeds 1/2tsp cumin seeds 1/2 tsp pepper corns Pinch of methi seeds 3 cloves 1/2" cinnamon stick C Little turmeric powder Tamarind as per your choice METHOD: Step 1: Heat 1 tsp coconut oil in a pan & roast all the ingredients under A on a slow flame till you get good aroma.  Step 2: Heat 1 tbsp coconut oi

Rose Cookies/ Kokkis

ROSE COOKIES/KOKKIS This is the tastiest Christmas sweet but most difficult one to prepare.  The final results depends on the quality of the mould used, temperature of the oil and thickness of the batter.  One need to be very careful and alert while preparing these sweets as they fry very fast.  It will be a messy work if the cookies stick to the mould while frying.  This delicious crispy cookies is my sons favourite Christmas sweet.  Recipe: I have taken 100ml cup for measurement.  Ingredients: A. 2 cups raw rice ( soaked for 1-2 hours) 1 cup thick coconut milk( 1st extract) 1/2 cup sugar 4 cardamoms Pinch of nutmeg 1 egg.  Salt to taste B. 1/4 cup maida Other ingredients: Oil for frying Kokkis mould Method: Step 1: Grind all the ingredients under A to a smooth batter.  Add maida & required quantity of coconut milk & prepare batter. RICE LADDU This is my family's favourite Christmas sweet. I prepare this often as & when i get freshly plucked coconut from my generous neighbours.  Roasted rice flour is used in the preparation of these rice laddus. Freshly ground coconut with jaggery & cardamom makes this laddus so yummy and mouthwatering.   They are so aromatic, super moist & so delicious.  Just 5 ingredients are used to prepare these super delicious laddus. These can be prepared easily and quickly if the roasted rice flour is kept ready.  Try this quick & easy recipe.  Recipe: Ingredients: 500 grams boiled rice 400 gms jaggery (as required) 1/2 large size coconut 50 gms sesame seeds 1/4 tsp cardamom powder.  Method: Step 1: Wash rice well. Drain & dry under sunlight atleast for 1-2 hours.   Dry roast on a medium flame to light brown colour. Nevri/Sweet Karanji

NEVRI Nevri is my most favourite Christmas sweet. Also called as 'Sweet Karanji'.  These are deep fried pastries, made with all purpose flour & stuffed with delicious sweet  rava- coconut- dryfruit mixture. The crispy crunchy outer crust & sweet nutty filling is  loved by most of us.  Recipe: Ingredients for the dough: A 1/2 kg all purpose flour 2 tsp hot oil Salt to taste.  Ingredients for the filling: B 2 tbsp ghee 1 cup Bombay rava 1 cup dry grated coconut 1 cup chopped dry fruits C 1/2 cup roasted sesame seeds 2 cups sugar powder 1/2 tsp cardamom powder.  Oil is needed for frying METHOD: Step 1 Kneed the dough using all the ingredients mentioned under A. Step 2 Prepare filling.  Heat ghee & fry all the ingredients mentioned under B on a low flame, till you get good aroma.  Slightly cool.  Add the ingredients under C & mix well. Kulkuls/Kidiyo

KULKULS/KIDIYO This is one of the main sweets prepared during Christmas. No Kuswar( Christmas sweet platter) is complete without the traditional Kulkul( kidiyo). 'Kidiyo' in konkani means worm. It is shaped like a worm.  This crispy crunchy sweet is loved by most of us.  People use different tools to  get perfect  curls with ridges on this snack.   Some use unused comb or fork. I prepare this using metal flat basket called as  kurpon in konkani. You can use wooden kurpon too.  Metal kurpon Recipe: Ingredients  : A 1/2 kg maida/ all purpose flour 1 cup coconut milk 2 tbsp hot oil Salt to taste.  For sugar syrup: 250 gms sugar( as per ur choice) 100 ml water.  Oil is needed for frying Method: Step 1: Mix all the ingredients under A and knead into a soft, smooth dough adding  coconut milk and water .  Step 2: Grease  the portion of metal kurpon which is used for preparation.  Take a small ball of the dough, flatten it using thumb , gently roll t
