KULKULS/KIDIYO

This is one of the main sweets prepared during Christmas. No Kuswar( Christmas sweet platter) is complete without the traditional Kulkul( kidiyo).

'Kidiyo' in konkani means worm. It is shaped like a worm. 

This crispy crunchy sweet is loved by most of us. 

People use different tools to  get perfect  curls with ridges on this snack.   Some use unused comb or fork. I prepare this using metal flat basket called as  kurpon in konkani. You can use wooden kurpon too.

Recipe:

Ingredients  :

A

  • 1/2 kg maida/ all purpose flour
  • 1 cup coconut milk
  • 2 tbsp hot oil
  • Salt to taste. 

For sugar syrup:

  • 250 gms sugar( as per ur choice)
  • 100 ml water. 

Oil is needed for frying

Method:

Step 1:


Mix all the ingredients under A and knead into a soft, smooth dough adding  coconut milk and water . 

Step 2:


Grease  the portion of metal kurpon which is used for preparation.  Take a small ball of the dough, flatten it using thumb , gently roll towards up or down.  Perfect kulkuls are ready to fry. 

Step 3:


Fry on a medium flame. Remove on an absorbent paper & cool. 

Step 4:



Heat sugar and water and prepare sugar syrup of 1 thread consistency. Add fried & cooled kidiyo. Mix immediately.



Allow it to  cool completely.   



Delicious,  crispy sugar coated kidiyo are ready.
Store in an airtight container.
