ROSE COOKIES/KOKKIS

This is the tastiest Christmas sweet but most difficult one to prepare. 

The final results depends on the quality of the mould used, temperature of the oil and thickness of the batter. 

One need to be very careful and alert while preparing these sweets as they fry very fast.  It will be a messy work if the cookies stick to the mould while frying. 

This delicious crispy cookies is my sons favourite Christmas sweet. 

Recipe:

I have taken 100ml cup for measurement. 

Ingredients:

A.

  • 2 cups raw rice ( soaked for 1-2 hours)
  • 1 cup thick coconut milk( 1st extract)
  • 1/2 cup sugar
  • 4 cardamoms
  • Pinch of nutmeg
  • 1 egg. 
  • Salt to taste

B.

  • 1/4 cup maida

Other ingredients:

  • Oil for frying
  • Kokkis mould

Method:

Step 1:


Grind all the ingredients under A to a smooth batter. 


Add maida & required quantity of coconut milk & prepare batter. Consistency of the batter should be like a dosa dough batter. 

Step 2:

Heat oil for frying & dip the mould in hot oil for 30 seconds. Do not overheat the mould. 

Step 3:


Dip 3/4th of the  mould in the batter & immediately place it in the medium hot oil. 

Step 4:


Slightly give a jerk & release the cookies in the oil. 

Step 5:


Dip frame again in the batter & continue the same process. 

Step 6:


These cookies hardly take 1 minute to fry. Flip sides & fry. 

Step 7:


Remove and place on an absorbent paper. 


Delicious Rose Cookies are ready.  Cool & store in an airtight container.
