Nevri/Sweet Karanji


NEVRI

Nevri is my most favourite Christmas sweet. Also called as 'Sweet Karanji'.

 These are deep fried pastries, made with all purpose flour & stuffed with delicious sweet  rava- coconut- dryfruit mixture.


The crispy crunchy outer crust & sweet nutty filling is  loved by most of us. 

Recipe:

Ingredients for the dough:

A

  • 1/2 kg all purpose flour
  • 2 tsp hot oil
  • Salt to taste. 

Ingredients for the filling:

B

  • 2 tbsp ghee
  • 1 cup Bombay rava
  • 1 cup dry grated coconut
  • 1 cup chopped dry fruits

C

  • 1/2 cup roasted sesame seeds
  • 2 cups sugar powder
  • 1/2 tsp cardamom powder. 

Oil is needed for frying

METHOD:

Step 1


Kneed the dough using all the ingredients mentioned under A.

Step 2


Prepare filling. 
Heat ghee & fry all the ingredients mentioned under B on a low flame, till you get good aroma.  Slightly cool. 
Add the ingredients under C & mix well. The filling is ready. 

Step 3:


You can prepare either a single poori or a large chapathi & cut it into small poories using a round plate or mould. 

Step 4:


I have used Nevri mould. Place the poori on the mould, apply water on the edges, place the required filling mixture in the centre. Fold & press the edges. Remove excess batter to have clean nevri shape. 

Step 5:


Nevris are ready to fry. 

Step 6:


Heat oil, Fry  prepared poories in batches on a medium flame flipping both sides. 

Step 7:


Delicious, crispy nevris are ready. Cool completely and store in an airtight container. 


Enjoy the crispy crunchy nevris with your loved ones.
