Homemade Ghee

HOMEMADE GHEE There are many, many benefits of consuming pure home-made ghee. If you consume pure home-made ghee on a regular basis, it will boost your mental as well as physical strength. This will help in keeping your body fit and fighting off illnesses. Besides this, ghee is also known as a body cleanser as it removes impurities from your body. It strengthens your eyesight, your muscles and tendons. Ghee is expensive but can be prepared easily at home  free of cost with cream collected from milk on daily basis.   Here is a very easy method of preparing ghee at home.  All you need is: 1. Cream collected from milk on daily basis & 2. Electronic Hand blender. Method: Step 1 Collect cream from boiled & cooled milk on daily basis & store in a container. Store container in the freezer.  Collect cream for about a month.  Previous day of preparing ghee, store the container in the cooler.  Put this chilled cream in a large vessel & blend with electric

Rich dry fruit Rum cake

  RICH DRY FRUIT RUM CAKE This is a very easy rich dry fruits rum cake, which turns out perfect everytime & is my family's favourite Christmas cake. This  super rich , tasty cake  needs no soaking of dry fruits and any pre-planning. I prepare this almost every month.  You can add any of your favourite dry fruits. I have used dates, tutti frutti, raisins, almonds and cashewnuts.  Recipe: Ingredients: A 100 gms unsalted butter 100 gms organic brown sugar/ white sugar 4 eggs Pinch of salt 1 tsp vanilla essence 1tsp mixed fruit essence B 100 gms all purpose flour 1 tbsp coco powder 1/2 tsp baking powder 1/2 tsp mixed spice powder* Pinch of baking soda C 250 gms of chopped mixed dry fruits 1tsp lemon zest 1tsp orange peel 2tbsp Rum 2tbsp all purpose flour D 3 tbsp sugar caramel METHOD: STEP 1 Prepare sugar Caramel. Heat 2 tbsp sugar with 1 tbsp water . Boil till you get dark brown smokey liquid.  Slightly cool & add 2 tbsp water & boil again. Cool & keep asid

FISH FINGERS

FISH FINGERS These are super crispy fish strips which can be served as an appetizer or a side dish.  Kids will love this as it is super crispy from outside & tender on the inside.  You need a boneless filleted fish for this recipe.  Try this super easy recipe which can be enjoyed by anyone.  Recipe: I have taken 400gms of butter fish fillet. This fish is called as Melg in tulu & darya denklo in konkani.  Ingredients for fish marination: 1tbsp  ginger garlic paste 1tbsp lemon juice 1tbsp soya sauce 1tbsp red chilly sauce 1tbsp pepper powder 1/4 tsp garam masala powder Salt to taste Ingredients for frying: Oil 2 eggs Breadcrumbs Method: Step 1: Cut boneless fish fillet into strips. Step 2. Add all the ingredients listed under marination.  Step 3: Marinate & keep aside for 1 hour.  Step 4: Beat eggs in a bowl.  Spread breadcrumbs in a wide bowl.  Heat oil.( I use cast iron pan for frying) Step 5: Dip fish strips in the beaten egg

Prawn Polov/Ash Gourd Curry with Prawns

PRAWN POLOV Ash gourd polov with mutton or prawns is loved by Mangaloreans. Fleshy, juicy Ash Gourd is cooked in a flavourful Prawn curry.  So flavourful & super delicious! Boiled rice and Ash Gourd polov is an excellent combo!  Curry is prepared with roasted spices and ground coconut paste.  I have taken 1/2 kg prawns and 3/4th kg ash gourd/ kuwalo. This is my mom's recipe. Please go through.  Recipe: Ingredients for grinding: A Ingredients for dry roasting: 3 red short chillies 1 red long chilly 2 tsp coriander seeds 1/2 tsp cumin seeds 1/2 tsp pepper  1/2 tsp raw rice Pinch of mustard B 5 flakes of garlic 1 large onion 2 tbsp coconut C 1/2 small size coconut Pinch of turmeric Little tamarind For seasoning: 1 medium size sliced onion 1 tbsp ghee Method: Dry roast all the ingredients under A one by one.  Fry onion along with garlic &  2 tbsp of grated coconut.  Grind this along with ingredients under C.  Use fresh, clean, deveined prawns. Wash, peal & dice

Jhatpat fish curry

Fish is one of the healthiest food on this planet. Its loaded with important nutrients like protein & vitamin D. Its a great source of Omega 3 fatty acids which is excellent  for body & brain.  Fish can be consumed in different ways.  Here is a very simple, quick & easy recipe to prepare delicious fish curry.  This requires minimum ingredients available at home.  All you need is ground coconut paste & few masala powders.  Butter fish curry. Recipe: I have taken around 12 fish pieces. This curry can be made with any large fish. I have done this using 2 different fish.  1.Butter fish/melug in tulu/ darya denklo in konkani 2. Black pomfret/ kappu manji in tulu/sorngul in konkani. Ingredients for  fish marination: 1 tbsp lime juice Salt to taste 2 tsp coconut oil Pinch of turmeric powder.  Ingredients for grinding: 1/2 small size coconut Little tamarind Ingredients for masala: A 1 large sliced onion 8 flakes of chopped garlic  1/2" ginger( chopped) 2 green chillies( sl

Pork Szechuan

PORK SZECHUAN Szechuan food is known for its deep rich flavours. Its a mixture of hot & spicy as well as sweet & sour. Szechuan dishes are made using lots of garlic & chillies. But here i have done as per my choice.  This is one of my most appreciated dishes .  Goes very well as an appetizer or as a side dish with fried rice or noodles Recipe: We need whole large pieces of pork for this dish.   Don't cut. You can also use medium size pieces.  I have taken a full block of pork weighing around 500 grams.  INGREDIENTS: A. Ingredients for marination: 1 tsp soy sauce 1 tbsp ginger garlic paste 1 tsp pepper powder Salt to taste 1 tbsp lemon juice B. Ingredients for frying: 1 large roughly sliced onion 1/2," ginger chopped 10-12 flakes of garlic chopped 3 -4 red short chillies. ( Cut into two pieces) C. Ingredients for sauce: 2 tbsp tomato sauce 1tbsp soy sauce 1tbsp  red chilly sauce 1tbsp Szechuan sauce 1tbsp cornflour 1/4tsp sugar STEP 1 Wash po
