Prawn Polov/Ash Gourd Curry with Prawns

PRAWN POLOV


Ash gourd polov with mutton or prawns is loved by Mangaloreans.

Fleshy, juicy Ash Gourd is cooked in a flavourful Prawn curry. 

So flavourful & super delicious!

Boiled rice and Ash Gourd polov is an excellent combo! 

Curry is prepared with roasted spices and ground coconut paste. 

I have taken 1/2 kg prawns and 3/4th kg ash gourd/ kuwalo.

This is my mom's recipe. Please go through. 

Recipe:

Ingredients for grinding:

A

Ingredients for dry roasting:

  • 3 red short chillies
  • 1 red long chilly
  • 2 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp pepper 
  • 1/2 tsp raw rice
  • Pinch of mustard

B

  • 5 flakes of garlic
  • 1 large onion
  • 2 tbsp coconut

C

  • 1/2 small size coconut
  • Pinch of turmeric
  • Little tamarind

For seasoning:

1 medium size sliced onion
1 tbsp ghee

Method:


Dry roast all the ingredients under A one by one. 

Fry onion along with garlic &  2 tbsp of grated coconut. 

Grind this along with ingredients under C. 

Use fresh, clean, deveined prawns.

Wash, peal & dice ash gourd. Add 1 cup  water , salt to taste &  cook till half done. 


Heat 1 tbsp ghee in a cooking vessel. Add sliced onion & fry till golden brown. Add cleaned prawns & fry for 1 minute. Add ground masala & fry for 2 minutes. 

Add half cooked ash gourd, masala  water , add salt to taste . Adjust the thickness of the gravy by adding required quantity water. Boil well & cook for another 2-3 minutes. 

Delicious prawn polov is ready. Serve with boiled rice.
