Pork Szechuan


PORK SZECHUAN

Szechuan food is known for its deep rich flavours. Its a mixture of hot & spicy as well as sweet & sour.

Szechuan dishes are made using lots of garlic & chillies. But here i have done as per my choice. 

This is one of my most appreciated dishes . 

Goes very well as an appetizer or as a side dish with fried rice or noodles

Recipe:

We need whole large pieces of pork for this dish.   Don't cut. You can also use medium size pieces.  I have taken a full block of pork weighing around 500 grams. 


INGREDIENTS:

A. Ingredients for marination:

  • 1 tsp soy sauce
  • 1 tbsp ginger garlic paste
  • 1 tsp pepper powder
  • Salt to taste
  • 1 tbsp lemon juice

B. Ingredients for frying:

  • 1 large roughly sliced onion
  • 1/2," ginger chopped
  • 10-12 flakes of garlic chopped
  • 3 -4 red short chillies. ( Cut into two pieces)

C. Ingredients for sauce:

  • 2 tbsp tomato sauce
  • 1tbsp soy sauce
  • 1tbsp  red chilly sauce
  • 1tbsp Szechuan sauce
  • 1tbsp cornflour
  • 1/4tsp sugar

STEP 1


Wash pork chunk well  and marinate with ingredients listed under A & keep aside for 1-2 hours. 


STEP 2:

Pressure cook this marinated piece adding 100 ml water for about 10-12 minutes. (4-5 whistles in pressure cooker) Cooking time depends on the quality of pork. 

Tender pork takes this time. 


STEP 3

Slightly cool & slice as per your choice.  Retain the boiled water. 


STEP 4:

Fry these slices in a nonstick pan without oil for 3-4 minutes. 


STEP 5:

Add all the ingredients listed under B to pork slices & toss on high flame for 2-3 minutes. 


STEP 6:

Add all the ingredients listed under C to the pork boiled water & mix well. 


STEP 7

Add this water to pork. Mix well. Add salt to taste. 


STEP 8:

Cook on a medium flame till everything is well combined.( For about 3-4 minutes) Keep on stirring. 


STEP 9:

Sprinkle some spring onion toppings & serve hot. 


Delicious  Pork Szechuan  is ready.
