HARIYALI CHICKEN Cooking is my passion. I keep trying different easy dishes with simple basic ingredients.   This hariyali chicken with naan is one of my family's favourite combo.  Lovely fresh mint from my tarrace garden gives extra taste, flavour & richness to this gravy. This creamy gravy is full of flavours and  is an ideal combo to savour  during the weekends.   This gravy goes very well with roti, naan, kulcha, poori or chapathi.  RECIPE Use ingredients as per your choice INGREDIENTS: 1kg chicken ( bone-in) A. For masala: 2 medium size sliced fried onions 6-8 cashew nuts 1/2" ginger 6-8 flakes of garlic 4-6 green chillies 1 cup curds 1 small bunch coriander leaves.  1 small bunch mint leaves.  B. OIL-FREE MANGALORE BUNS  This post is for health conscious people who love to have healthy, oil-free snacks.  Perfect snack to cut down on fat or calories! Mangalore buns are loved by most of us. It's a deep fried snack. This time i have tried a healthy option by frying it in an air fryer.  These buns turned out absolutely perfect , totally oil-free & are a perfect choice to start a day with a healthy breakfast.   This can be served  hot with sambar/ chutney for breakfast or evening tea. I have replaced all purpose flour with wheat flour. RECIPE: INGREDIENTS: 2-3 cups wheat flour 4 ripe bananas 1/2 cup curds 2 tsp jeera seeds Sugar as per your choice Salt to taste Baking soda (3 pinch) 1 tbsp ghee (optional) METHOD: Mash the bananas,  add sugar, salt, curds, jeera. CHICKEN MASALA CURRY This is the most simple , super delicious & easy curry for beginners.  This juicy flavourful chicken curry is my all time favourite dish.  Easiest curry to prepare when i am buzy or lazy ( lol) This curry can be prepared easily with few basic ingredients available at home. A good quality garam masala, masala powders & roasted onions can give you  the best results.  Use kashmiri chilly powder for vibrant colour.  This  curry can be prepared with many variations. Dry version goes well with chapathies, parathas or with rice & dal. Just allow all the moisture to evaporate  to get dry chicken masala dish.   Semi dry  version also goes well with roti, rice or naans , bakri, mutlin etc. Gravy version goes very well with rice, panpole/ neeru dosa, sannas, appams etc.  Gravy version can be prepared by adding coconut milk, ground coconut paste or coconut- cashew / poppy seeds paste.  I have us...

STIR FRIED VEGGIES WITH GRILLED FISH This is one of the the best options for a quick, healthy dinner. Many a times we have this as our light meal.  Its simple, quick & super healthy.  This can also be  served with steamed rice as a side dish.  One can have lots of variations to this recipe. Instead of fish, you can add any meat of your choice,  few nuts and some green leafy vegetables too. I fry fish in the grill pan & in the same flavoured oil i stir fry all the veggies.  While stir frying veggies, make sure to add all the hard veggies first and then add soft veggies.  Make sure to retain the freshness of crispy crunchy veggies by frying them  just perfect. BANGUDE PULI MUNCHI/ TANGY-SPICY MACKEREL CURRY Bangude puli munchi is a very famous dish of mangalorean cuisine which is loved by most mangaloreans.   'Puli munchi' is a  tulu term which refers to a 'tangy spicy' flavoured curry which i am sure will tickle your taste buds.  This is  my hubby's most favourite fish curry.  Fish is cooked with tangy spicy masala on a slow flame which makes this dish so flavourful & super delicious.  This dish tastes  better on the next day as all the flavours & spices are well absorbed  by  the fish pieces.  The taste depends on the quality of fish you use.
