CHICKEN MASALA CURRY


This is the most simple , super delicious & easy curry for beginners. 

This juicy flavourful chicken curry is my all time favourite dish.  Easiest curry to prepare when i am buzy or lazy ( lol)

This curry can be prepared easily with few basic ingredients available at home. A good quality garam masala, masala powders & roasted onions can give you  the best results.  Use kashmiri chilly powder for vibrant colour. 

This  curry can be prepared with many variations. Dry version goes well with chapathies, parathas or with rice & dal. Just allow all the moisture to evaporate  to get dry chicken masala dish.  

Semi dry  version also goes well with roti, rice or naans , bakri, mutlin etc. Gravy version goes very well with rice, panpole/ neeru dosa, sannas, appams etc. 

Gravy version can be prepared by adding coconut milk, ground coconut paste or coconut- cashew / poppy seeds paste. 

I have used coconut paste in this recipe. 


RECIPE:

Kindly use spices as per your requirements

INGREDIENTS:

1/2 kg chicken pieces( bone in)

  • 2 thinly sliced medium onions
  • 1 tsp gener - garlic paste
  • 1 slit green chilly
  • Few curry leaves
  • 1-2 tsp Kashmiri red chilli powder
  • 3/4 tsp garam masala powder
  • 1/2tsp coriander powder
  • 1/4tsp jeera powder
  • Pinch of turmeric powder
  • 1/4tsp pepper powder
  • 2 tbsp ghee
  • 2 large chopped tomatoes
  • Few coriander leaves
  • 1 cup coconut paste. 
  • Salt to taste
  • Few potato cubes( optional)

METHOD:


Heat 2 tbsp ghee in a cooking vessel. 
Add 2 sliced onions & fry till slight brown. 

Now add ginger garlic paste, fry a little. Add tomatoes, green chillies & fry for 2 minutes. 

Now add all the masala powders one by one , curry leaves & mix well. Add chicken & mix well .

Add salt to taste, 1/2 cup water & cover & cook till its half done.  Add potato cubes if you wish.  Cover & cook for 2-3 minutes. 

Add  coconut paste or coconut milk & mix well. Adjust the thickness as per your choice.  Cover & cook till done. Garnish with chopped coriander leaves.  
Delicious chicken masala curry is ready. 

Goes extremely well with panpole/ neeru dosa. 

You can have a semi dry version by adding coarsely ground coconut .
 
Goes very well with rice bakri or mutlin/pundi.
