MANGALOREAN PORK OFFAL CURRY/KALIZ-ANKITI/SORPOTEL This is a speciality of every mangalorean Catholic households.  This authentic delicacy is prepared on special occasions & especially enjoyed on roce day ( pre- wedding day celebration) This mouth watering dish tastes the best when served with hot steaming sannas or pav. Goes well even with plain rice & mutton polov.  I grew up eating this dish. My grandmother used to cook this in the thondore ( idli steamer) & we used to relish this almost for a week.  Cleaning the offal is truly a messy job but thanks to the present pork dealers who supply very clean pork offal.  Out of all the parts i prefer only little quantity of intestine, heart & liver & nothing else. My pork vendor was kind enough to give only the parts which i preferred. FISH ROE/ FISH EGGS FRY This is one of the best enjoyed sea food delicacies of coastal region.  This roe is found mostly in monsoon season when fish lay  eggs. It is called as Gaboli in Marathi, maslechi paer in konkani.  My father never  missed a chance to buy this whenever it was available in local fish market.  Fish eggs are rich source of omega 3 fatty acids & vitamin B 12 & hence considered as a healthy food.  These are prepared in different ways &  Bengali cuisine is famous for different varieties of sweet water fish roe dishes.    The soft grainy texture gives unique taste to this dish and makes it  super delicious .  This can be served  as an appetizer,  side dish with rice or with chapathies . Semolina Naan

SEMOLINA NAAN I have prepared different types of naans so far, but this one i feel is the best among all.   The soft, fluffy semolina naan can be prepared very easily with very few ingredients available at home.  This super delicious naan goes well with any meat curries or any butter masala curries. This also can be eaten plain , hot from the pan smeared with ghee or fresh butter.  Here is a simple easy recipe to prepare these delicious naans.  RECIPE INGREDIENTS: (A) 1 cup luke warm milk 1 tsp sugar 1 tsp dry yeast 1/2 cup Semolina/suji 2 tbsp oil (B) 2 cups of All purpose flour Salt to taste.  METHOD: Add all the ingredients under (A) to the blender blend for 30 seconds.  Pour this mixture into a bowl & cover.
