MANGO CHUNDA/ SWEET RAW MANGO PICKLE

MANGO CHUNDA Call it a pickle, jam, marmalade or chunda, this spicy, sweet & tangy pickle is my younger sons most favourite pickle.  This can be prepared in two ways. Authentic Aam chunda is a sun-dried pickle. But can also be prepared by boiling.  This goes well with rice ,chapathi, poori or with dosa.  Preparation is very simple & easy with just 4 ingredients. Make sure that the mangoes are fleshy & raw.  I have prepared in both ways.  RECIPE Ingredients: 3 large raw mangoes Equal quantity sugar( i have taken half the quantity) Chilly powder as per your taste( i have used around 2-3 tsp Kashmiri chilly powder) 1/2tsp roasted Jeera powder Salt to taste Method: Wash &  pat dry raw mangoes. Peel & grate  or shred mangoes and keep aside.  Add sugar, masala powders, salt & mix well.  1ST METHOD : SUN DRIED: Transfer the mixture to a glass bowl.  Place this bowl in sun for about 5 to 6 days. HOMEMADE RAISINS

HOMEMADE RAISINS Raisins/dry grapes can be prepared very easily at home.  All you need is fresh grapes & good sunlight.  Raisins are rich in iron, fibre & calcium and other essential nutrients. The natural sweetness and fibre in raisins can keep us fuller for longer time & thus help in weight loss. Try adding raisins in breakfast, salads & other eatables.  Raisins can be prepared when grapes are available in large quantities at cheaper price. Homemade products are always hygienic , healthy & tasty. RECIPE: ( I have taken around 350 grams of fresh grapes) All you need is: Fresh grapes Water  Sunlight Method: Use fresh grapes. Smaller grapes are better. I have taken long grapes.  Wash thoroughly atleast 3 times.  Remove larger stems & seperate the grapes.  Boil enough quantity water to blanch the grapes. (For 1 cup grapes you need 2 cups of water) Add grapes to boiling water & you can see the grapes settling at the bottom. 

MALPURI

MALPURI This is one of my favourite sweet. The crispy circumference & soft centre makes this sweet so special & truly delicious. This sweet requires very few ingredients and can be prepared easily and quickly at home.  RECIPE: For 10 malpuries. Ingredients: 1 cup all-purpose flour (150ml cup) 3/4th cup sugar ( i used 1/2 cup) 3/4th cup water 2 tbsp rava ( semolina) 1/4 cup thick fresh curds Pinch of cardamom powder Few saffron strands Pinch of salt Ghee /oil for frying( I used ghee) Method: Heat water & add sugar. Mix well till sugar dissolves completely.  Cool the sugar syrup.  Add few saffron strands into sugar syrup. You can use turmeric powder or food colour too. I used saffron.  Add all purpose flour, rava, curds & cardamom powder & pinch of salt to sugar syrup & mix well. The batter should be thick  &  pouring consistency. Add water if required.  Cover & keep aside for 30 minut

Shevyo/String Hoppers with Roce

SHEVYO/STRING HOPPERS WITH ROCE.  This was the most loved sweet dish during our childhood days when we used to return home  from school & our stomach grumbling for some yummy snacks.   My mom used to keep 6 plates with shevyo along with roce for her 6 children & we used to enjoy this super delicious sweet dish.  Preparing string hoppers is a tough job but the roce can be prepared easily with just 3 ingredients. This roce is called as "jivo roce"(in konkani) as its done without boiling the coconut milk.  Shevyo/string hoppers String hoppers/shevyo is done by using ground soaked boiled rice to thick paste, boiled & pressed   to have thin rice noodles/ string hoppers/ shevyo.  JIVO ROCE/ RAW  SWEETENED COCONUT MILK RECIPE: Ingredients: 1-2 cups of grated coconut Jaggery powder Cardamom powder ( Quantity of ingredients depends on the quantity of string hoppers) Method: Grind coconut  & extract coconut milk. SWEET & SOUR CHICKEN STRIPS These sweet & sour crispy chicken strips are my family's favourite . This dish can be prepared quickly & easily if all the ingredients are readily available.  We can serve these as an appetizer or a side dish with rice or noodles.  RECIPE: INGREDIENTS : A.  FOR MARINATION: 300 gms boneless Chicken strips 1 tbsp ginger garlic paste Salt to taste 2 tsp pepper powder 1 egg B FOR SAUCE 1 Cup water 2 tbsp soya sauce 1 tbsp  red chilly sauce 1 tsp brown sugar 1 tbsp honey Salt to taste Juice of 1 lemon Other ingredients: 1 medium size chopped onion 5-6 flakes of garlic chopped 1/2tsp chilly flakes 1cup all purpose flour Spring onion Sesame seeds Oil for frying Method: Marinate chicken strips with all the ingredients mentioned under A. Wheat Manni/ Godhi Halbai

WHEAT MANNI This is an authentic & traditional dessert of Mangalore , udupi region.  This is also called as wheat halbai. This delicacy is prepared with whole wheat, jaggery & coconut.  This can be served as a breakfast , dessert or an evening snack.  Try this Healthy snack for your loved ones. Its so delicious , nutritious & just melts in your mouth.  This dish requires minimum ingredients & can be prepared quickly & easily if all ingredients are kept ready.   Cooking time: 25-30 minutes.  Recipe: Ingredients: 250 gms whole wheat 250 gms jaggery( as per your choice) 1/2 medium size coconut 1/4 tsp cardamom powder Few roasted dry fruits 4-5tsp ghee Salt to taste.  Method: Soak whole wheat atleast for 6 hours.  Grind wheat to coarse paste.  Put the ground paste in a strainer & strain the juice.  Put the residue back to mixer grinder jar,  add water & grind again.  Strain the juice.
