ORANGE GHEE CAKE I just love to prepare varieties of cakes in  the air fryer as i find it very easy to bake & also much tastier.  Store brought  ghee cake is very expensive & has added preservatives.  This cake can be prepared with less cost with few ingredients available at home.  I have already posted my recipe on plain ghee cake. This time i tried this orange ghee cake which turned out just too delicious.   This cake is so moist, it just melts in your mouth. We can't bake large cake in air fryer as the basket is small in size. MELACHE THANDLA LADDU/RICE LADDU Rice laddu is one of my favourite snack. It's one of the delicious sweets prepared during Christmas season. I prepare this often as my hubby loves these laddus.  I have posted my favourite recipe of rice laddus already. (https://lavisdelicacies.blogspot.com/2020/12/rice-laddoos.html) This time i have prepared it in a traditional way where it can be preserved for a longer time. Here its prepared with jaggery syrup.  These laddus can be preserved for about  2 weeks in room temperature & for nearly 3 months in the refrigerator.  Here is a simple easy recipe for these delicious laddus.  RECIPE INGREDIENTS 500 gms boiled rice 400 gms jaggery (as per your choice) 50 gms roasted sesame seeds 1/2 large size grated coconut 5 cardamoms 2-3 tsp ghee Pinch of salt.  METHOD: Wash & drain boiled rice.  Dry in sun for minimum 30 minutes.  Dry roast on a high flame to light golden brown colour....

JACKFRUIT FRITTERS/GARIYO This snack is most loved during monsoon season.  These are called as ponsachyo Gariyo in konkani.  These fritters with crispy exterior & soft interior is the delicacy of southern region.  These can be prepared easily during jackfruit season.  I do preserve jackfruit pods in freezer & prepare this snack whenever required.  Here is a simple, easy recipe to prepare this delicious snack.  RECIPE INGREDIENTS: 1 cup (250gms) dosa rice/raw rice 1/2 cup coconut 3/4cup deseeded jackfruit pods 1/4 cup jaggery* (as per your choice) 1 cardamom Salt to taste Oil is required for frying (*use jaggery as per your choice. SANNA These are fluffy steamed rice cakes made with rice & dal batter.  Delicious steaming hot sanna with dukra mass (pork bafat) is a delicacy among mangalorean Catholics.  Sannas are prepared mostly during festive occasions & during any celebrations in the house.  These are originally prepared using toddy but now we use yeast for fermentation.  These soft ,spongy sannas are best enjoyed with any fish or meat curries or with sambar & chutney.  They can be  enjoyed for breakfast, lunch , dinner or even for evening tea.  Rice & dal ground, fermented & steamed in steaming vessel  yields these delicious, soft, spongy sannas.  Here is a simple easy recipe for soft delicious sannas.
