( Inspired by 'Tom Cruise Coconut Bundt Cake')
My son wanted me to try this famous “Tom Cruise Cake” .
It's a white chocolate-coconut Bundt cake from Doan's Bakery in California. Every year, Tom Cruise gifts the decadent cake to his closest friends for the holidays.
I tried my level best to prepare this super yummy coconut cake as per my choice .
Believe me, it's the best coconut cake I have ever tasted !

Incredibly moist, super creamy, fluffy, topped with amazingly delicious cream cheese frosting , decorated with shredded coconut! Super yumm!
The creamy coconut milk added to the batter adds amazing flavour, fluffiness and juicy - creamy texture to this awesomely delicious cake.
The sweetened desiccated coconut flakes adds unique flavour and richness to this gorgeous cake.
Try this easy cake recipe and I am sure your family would definitely request you to prepare it again and again.
Please note:
Here I have used less sugar as we prefer less sweet cake. You can add sugar as per your preference.
You can use sweetened or unsweetened desiccated coconut flakes .
You can use grated or melted white chocolate. Here I used grated white chocolate.
Baking time might change as per your oven temperature settings. Kindly insert a skewer and check for baking.
Here is my recipe for this delicious cake:
Recipe:
Ingredients for the cake:
Wet ingredients:
- 100 gms unsalted butter
- 100 gms sugar ( I used only 50 gms)
- 2 eggs
- 50 gms grated or melted white chocolate
- 150 ml coconut milk
- 1 tsp coconut extract/essence
Dry ingredients:
- 200 gms all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
Ingredients for Cream cheese frosting:
- 150 gms Cream Cheese
- 25 gms unsalted butter
- 5 tbsp powdered sugar ( as required)
- Few drops of vanilla essence
Other ingredients :
You require a bundt cake pan for baking this cake and desiccated coconut flakes for garnishing.
Method:
Add all the wet ingredients one by one starting with butter and sugar to the mixing bowl & whip till the mixture is light and fluffy.
Mix all the dry ingredients and keep aside.
Add dry ingredients to the wet mixture and mix gently.
Light , creamy cake batter is ready.
Grease the bundt pan and add the cake batter. Spread it evenly.
Bake this in a pre-heated oven for 30 minutes at 180° C.
Delicious coconut bundt cake is ready. Allow it to cool for 2-3 hours.
Cool the bundt cake, place a serving plate over the bundt cake and flip the cake to turn it out of its pan. Cool completely before frosting.
Meanwhile prepare cream cheese frosting.
Whip all the frosting ingredients till light & fluffy.
( Here i was in a hurry to go out on an urgent work , so i added all the ingredients to the grinding jar & pulsed it for 10 seconds 4-5 times)
Cream cheese frosting is ready.
Spread the frosting neatly above the cake.
Sprinkle desiccated coconut flakes generously above the frosting on all sides.
Super delicious (Tom Cruise) Coconut Bundt cake is ready.
Slice as per your choice.
Super moist and incredibly delicious, rich yummy cake !
