Pork Bafat with ground masala/ ದುಕ್ರಾ ಮಾಸ್ ಬಫಾತ್ (ಮಸಾಲಾ ವಾಟುನ್ ಗಾಲ್ನ್) 


Pork Bafat Pork is the most loved dish among  mangalorean Catholics.

There are many varieties of dishes prepared with pork but pork bafat is the traditional delicacy & i feel,  it's the best among all pork dishes. 

Pork Bafat & sanna is an excellent combo to relish on a cool rainy day. 

This  Pork Bafat dish can be prepared with Bafat powder or with ground masala paste.

This time i have prepared pork bafat with ground masala paste. 

The aroma and taste of pork bafat with masala paste is so unique. This divine aroma makes everyone fall in love with this dish.  

This dish tastes awesome with sannas, bakri or mutlin.  It tastes awesome on the 2nd day when the meat absorbs all the flavours from the masala. 

Recipe is simple & easy.  

Please note:

Kindly use chillies as per your preference. 

Cooking time of meat depends on the quality of meat. 

I have added few homegrown kashmiri chillies for the masala. 

Recipe:

Ingredients:

  • 1 kg pork
  • 3 large onions roughly chopped 
  • 2 green chillies slit
  • 1" ginger finely chopped 
  • 1 pod garlic ( peeled)
  • 1" cinnamon 
  • 2 bay leaves 
  • 1/4 tsp garam masala powder ( optional)
  • 1 tsp vinegar ( optional)

Ingredients for the masala:

  • 5-6 red long chillies ( Byadagi)
  • 3 kashmiri chillies 
  • 3 red short chillies 
  • 2 tbsp coriander seeds 
  • 1/2 tsp jeera/ cumin 
  • 1/2 tsp pepper 
  • Tiny pinch of mustard 
  • Pinch of turmeric 
  • 4 cloves 
  • 1" cinnamon 
  • 1 small lemon size tamarind 
  • 1 small onion 

Method:


Grind all the ingredients mentioned under Masala to a fine paste. 
(Dry grind all the spices, then add onion & tamarind, little water & grind to a fine paste.)


Wash, clean & cut pork into small cubes. 


Add ground masala paste, masala water , salt to taste , 1" cinnamon, 2 bay leaves, chopped ginger & slit green chillies. 



Mix well &  cook  till pork is 80% cooked. 


Now add  roughly chopped onion & garlic. Mix well. Add  1 tsp vinegar , little garam masala powder, salt to taste. 

Mix well. Cover & cook till done. 


Super delicious pork bafat is ready to serve. 


Tastes awesome with fresh, soft, fluffy sannas. 


Tastes even better on the 2nd day. 
Meat will absorb all the masala and tastes super delicious.
