Fried Chicken Pulao


Fried chicken pulao 

This juicy aromatic rice mixed with roasted , moist chicken pieces is my family' favourite meal on weekends!

So aromatic & super delicious!

This is a flavourful one pot meal which can be enjoyed on a weekend or during any celebrations. 

This pulao is prepared with Jeera samba rice / Jeera rice which is a very aromatic short grain rice. This rice has a unique flavour which makes this dish so rich and enjoyable. 

I prepared this dish with boneless chicken as my sons love boneless chicken. You can use chicken with bone too. 



I served this pulao with mint raitha. You can serve with plain raitha or with any salad. 

Recipe is quite simple with few basic ingredients available in the pantry. 

This can be served for the kids lunch box or you can enjoy this for picnic parties too. 

Try this easy dish & enjoy on your weekend. 

Please note:

Use spices as per your choice.

I have added very little masala powder for the pulao as I love delicately flavoured Pulao. You can make it spicier as per your choice. 

I used only 2 tbsp ghee here. You can use as per your preference. 

Recipe:

A. Ingredients for chicken marination:

  • 500 grams chicken. 
  • 3 tbsp curds
  • 1 tbsp kashmiri red chilly powder 
  • 1 tsp coriander powder 
  • 1/2 tsp jeera powder 
  • 1/2 tsp garam masala powder 
  • Salt to taste. 

B.Ingredients for the pulao:

  • 2 cups of jeera samba rice ( 400 gms)
  • 2 medium size finely sliced onions
  • 2 tbsp ghee or oil
  • 1" cinnamon 
  • 3 cloves 
  • 2 cardamoms 
  • 2 bay leaves 
  • 3 Star anise
  • 1/2 tsp red chilly powder 
  • 1/4 tsp coriander powder 
  • 1/4 tsp jeera powder 
  • 1/2 tsp biriyani masala powder 
  • 1/2 tsp garam masala powder 
  • Few chopped coriander & mint leaves 
  • Juice of 1 lemon
  • 1 cup chicken broth 
  • 3 cups of water 
  • Salt to taste. 

Method:




Add all the ingredients mentioned under ( A) chicken marination to chicken pieces. Mix well & keep aside for 1 hour. 



Wash & soak jeera samba rice for 1/2 an hour. Drain & keep aside.



Heat 1 tbsp ghee in a cooking vessel. Add marinated chicken pieces and fry till golden brown on both sides. 



Remove & keep aside. 



Reserve this leftover marinated paste for the pulao. 



In the same vessel add 1 tbsp ghee. Add 2 finely sliced onions.
Fry till golden brown. 
Add whole garam masala ingredients ( cloves, cinnamon, bay leaves, star anise, cardamom) fry for 20 seconds. 
Add masala powders mentioned under ( B) one by one. 



Add the leftover marinated paste.
Add 1 cup chicken stock. 



Add 3 cups of water, lemon juice, coriander/ mint leaves. Salt to taste. Mix well & allow it to boil. 

Add soaked & drained rice. 
Mix well. Boil on a high flame for 3-4 minutes. 
Reduce the flame & cover & cook for 10 -12 minutes. 


Lightly mix with the help of a fork. 
Cover & cook for 1 minute. 
Switch off the flame & allow it to cook on its own steam for another 6-8 minutes. 

Delicious pulao is ready to serve. 
Add all the chicken pieces on top. 

So aromatic and super delicious!

Serve hot with cucumber raitha.
