Chicken Green Masala 


This is one of the oldest & most popular delicacy of Mangalorean cuisine. This curry was served for feasts, weddings or any other celebrations during our childhood days. 

This quick & easy curry is a perfect blend of aromatic spices and has a freshness and flavours of herbs like coriander & mint leaves. 

This flavourful green curry goes extremely well with sanna, neeru dosa/ panpole, appams and even with roti, chapathi or boiled rice. My family loves it with soft silky neeru dosas/panpole & sanna. 

This curry tastes awesome with local chicken ( naati koli). My hubby loves potatoes in meat curries. I have added potatoes here. You can skip if you wish. 

Simple easy recipe with few basic ingredients available at home and few fresh herbs like coriander and mint leaves.


I have mint plants in 3 pots & these fresh leaves often tempt me to prepare green masala curries or chutneys. 

Please note:

Use spices and chillies as per your preference. 

Cooking time of chicken depends on the quality of chicken . Tender chicken/ broiler  chicken cooks faster. 

Recipe:

Ingredients:

1kg chicken 
2 potatoes,  ( optional)

Ingredients for the Masala:

  • 5 green chillies
  • 3/4" ginger
  • 6-8 flakes of garlic
  • 1 /2 tsp pepper
  • 1/2 tsp jeera/ cumin seeds 
  • 1/2 tsp coriander seeds
  • 5 cloves
  • 1" cinnamon
  • 1/2 tsp fennel seeds
  • 1 star anise
  • 1 cardamom
  • 1/2 tsp poppy seeds
  • 3 cashew nuts ( optional)
  • 2-3 tb sp coconut 
  • 2-3 medium onions
  • Little tamarind
  • Little turmeric
  • 1 small bunch coriander leaves
  • 1 small bunch mint leaves 

Ingredients for seasoning:

  • 1 small sliced onion 
  • 1 chopped tomato 
  • 1-2 tbsp ghee

Method:


Wash & clean chicken well & keep aside. 

Grind all the masala ingredients to a fine paste. 


Heat ghee for seasoning. Add 1 sliced onion.  Fry till golden brown. 

Add ground masala paste & fry for 4-5 minutes on a slow flame. 

Add tomato, chicken. Mix well. Add masala water & cook for 5 minutes. 
Add potato pieces ( optional). 
Add salt & pinch of sugar to taste. 

Cook for another 8-10 minutes Or till the potatoes & chicken is cooked well. 


Super delicious, glossy, flavourful chicken green masala gravy is ready to serve.
