Aloo Puri -Aloo Sabji/Potato puri with Potato Curry
This is one of the tastiest breakfast or brunch recipe which my family loves.
Flavourful , crispy potato puri is served with super delicious potato curry.
Here we use potato paste to prepare puri and roughly mashed potatoes in the gravy. So the key ingredient for this dish is the boiled potatoes.
This puri has a unique flavour, crunch and taste and the taste of the potato gravy is truly to the next level.
You can prepare regular wheat puri too for this gravy or chapati, roti, naan too goes well with this delicious gravy.
Very simple, easy recipe with few basic ingredients.
Please note:
Kindly use masala powders as per your preference.
We prefer less spicy food.
Recipe for Aloo Sabji/ Potato Curry:
Ingredients:
- 3 boiled potatoes
- 2 tbsp oil or ghee
- 2 cloves
- 1" cinnamon
- 2 bay leaves
- 1/4 tsp jeera
- 1/2 tsp ginger garlic paste
- 1 medium size finely chopped onion
- 1 medium size finely chopped tomato
- 1 tsp kashmiri red chilli powder
- 1/2 tsp coriander powder
- 1/3 tsp jeera powder
- 1/2 tsp garam masala powder
- 1/4 tsp kasoori methi
- Little amchoor powder
- Salt to taste
- Pinch of sugar to taste
- Coriander leaves for Garnishing.
Method:
Boil potatoes. Cool & mash roughly.
Heat 2 tbsp oil in a cooking pan.
Add bay leaves , cloves, cinnamon & fry for 30 seconds
Add jeera, add onion & fry till slight brown.
Add tomato & add ginger garlic paste. Fry for 1 minute.
Add all masala powders. Mix well. Add kasoori methi .
Add 2 cups of water. Mix well.
Add mashed potatoes. Salt & sugar to taste. Mix well.
Cover & cook for 2 minutes.
Garnish with coriander leaves.
Super delicious potato curry is ready to serve.
Tastes awesome with aloo puri or plain puri/ chapati.

How to make Aloo Puri?
Recipe:
Ingredients:
- 1/2 cup semolina/ rava
- 1/2 cup hot water
- 1 medium size boiled potato
- 2 cups of wheat flour
- Pinch of kasoori methi
- Little coriander leaves
- Little carrom seeds/ ajwain
- Little jeera
- Water (as needed)
- Oil is required for frying
Method:
Add 1/2 cup hot water to 1/2 cup rava. Cover & keep aside.
Add boiled potato & mash well with potato masher.
Add wheat flour, salt to taste. Add ajwain, jeera, kasoori methi, coriander leaves .
Add very little water & kneed to a soft dough.
Take a small portion & roll into a small puri.
Heat oil , add puri & fry till done.
Remove on an absorbent paper.
Crispy, delicious aloo Puri is ready to serve.
