Ripe Mango Curry 


Flavourful, super  delicious mango curry prepared  with juicy ripe  mangoes.  This  sweet & savoury curry has a unique taste which is a combination of sweet , tangy & spicy flavours. 

One bowl full of mango curry with steaming hot boiled rice!

Whenever  my  son comes down on vacation during mango season, he requests me to prepare this curry in the largest vessel and serve him everyday ( lol)

Ripe mangoes are cooked in a sweet and spicy gravy & served with steaming boiled rice.  This rice and mango curry combo was a most enjoyed meal during our childhood days.  I love it even today.  It tastes phenomenal the next day.

This curry is prepared with a special variety of mangoes. They are called as ' local wild mangoes ' (' kaat kukku' in tulu language)

These mangoes  have a  unique taste and lots of fibre which is enjoyed  by dipping in the sweet & sour gravy while eating . 

Now we get a special variety called as shakkargutli / sugar baby mangoes which are equally good for this curry. 

I prepare this curry atleast 6-8 times during mango season and I do preserve these special variety mangoes in the freezer for future use especially for my son. You can even prepare the curry & store in the freezer for future use. 

This recipe i learnt from my mother. Very simple & easy, which doesn't need any grinding work. 

It's an instant curry which can be easily prepared by any beginner.

Please note:

Select good quality fully ripe mangoes. 

Jaggery can be added according to the sweetness of mangoes. 

These Mangoes have natural sweet and tangy flavour . You can add little tamarind paste, to balance tangy flavour if the mangoes are not  sour.

Here i have used Bafat powder. You can use red chilly powder instead. But bafat powder is a mixture of many spices which gives awesome taste to this dish.

Mango curry Recipe:

Ingredients:

  • 8-10 ripe mangoes 
  • 1 tbsp Bafat powder/ red chilly powder ( as required)
  • 2 tbsp coconut oil
  • 1/4 tsp mustard 
  • Pinch of jeera
  • 5 crushed garlic flakes
  • Few curry leaves 
  • Jaggery as required 
  • Salt to taste 

Method:


Nicely wash & clean mangoes. 

Peel the skin. Keep the mangoes separate. 

Add 1 cup water to the skin & mash well.  

Squeeze out all the pulp from the skin & keep it aside. 

Add 1 cup water again to the skin. Mix well & squeeze the pulp . 

Repeat this process atleast 3-4 times till you get good amount of juice from the peels. 

Heat 2 tbsp oil in a cooking pan. 

Add mustard, jeera & allow it to splutter. Add garlic & fry till slight brown. Add curry leaves & add bafat powder. Fry for 1 minute on a very low flame. 

Add mangoes. 

Mix well. 

Add mango pulp.  Add jaggery, salt to taste. 

Mix well & boil. 

Cover & cook on a slow flame for 10-12 minutes. 

Super delicious , spicy,  sweet & sour mango curry is ready to serve. 

Enjoy this with hot steaming rice.
