Can you believe that this moong dal kheer is prepared in just 15 minutes?

Ys its true! 

No grinding coconut! No extracting milk! 

Quick, easy & super delicious!! 

Recently, i was down with viral fever & was not able to eat much. I had some unusual cravings & one of them was moong dal kheer. 

My son said that he will order kheer from the restaurant but i was craving for my own homemade kheer. 

There was absolutely no energy left to go through the elaborate way of preparing authentic moong dal kheer. Hence , I followed this shortcut method of quick & easy way of preparation. 

The result was amazing and  my hubby was truly shocked to see me preparing such a tasty  kheer within such a short time. 

This method can be very helpful for working moms or anyone who crave such sweet & has absolutely no time for the preparation. 

You can enjoy this kheer on any festive occasion or relish as a dessert with any meal. 

Please note:

I didn't use rice batter in this kheer. You can add 1 tbsp rice batter if you wish . 

Use jaggery as per your choice. 

This is my way of quick & easy kheer. 

You can add little sabudana/ sago or roasted sevai/ vermicelli too for this kheer. 


Recipe:

Ingredients:

  • 200 gm moong dal ( 1 cup)
  • 200 gm jaggery
  • 200 ml coconut milk
  • 1/4 tsp cardamom
  • Salt to taste
  • Few roasted dry fruits

Method:


Roast few dry fruits with 1/4 tsp ghee & keep aside.
 
Wash 1 cup moong dal ( 200 gms) 2-3 times. 

Add 2 cups of water. Pressure cook for 2 whistles. 
I didn't have any energy to stand in front of the gas stove. I wanted to finish the process as fast as possible. Here I have used cold water to depressurize the pressure cooker .

Remove the pressure cooker from the stove once cooking is done. Carefully take the pressure cooker to the sink and pour cold water onto the lid, not onto the vent or valve. The cold water will cool the cooker rapidly and cause it to depressurize. Once the pressure indicator has dropped, it's safe to open the cooker
 
(Those who have time, can wait for the pressure to release on its own and allow the cooker to cool down naturally) 

Boiled moong dal. 

Add jaggery, salt to taste. Mix well. Take 1 whistle or cook for 2-3 minutes.

Again depressurize the cooker  under running water. 

Open the lid.  You can find this consistency. 

Add 200 ml ready made coconut milk & mix well. Add 1/2 +1/2 cup cup water to the coconut  milk  packet. Shake well & add to the kheer. 

Check for salt & sweetness. Allow the mixture to have pouring consistency. 

Add cardamom powder, roasted dry fruits. Mix well. 

Delicious,   quick & super tasty moong dal kheer is ready to serve.
