Mixed vegetable dry


This is a very tasty, nutritious and flavourful veg dish which is one of the favourite dish of my family members. 


Whoever have tasted this dish here have appreciated it a lot and have asked for the recipe. 

I prepare this dish often during fresh peas season as the fresh peas added here,  gives awesome taste and flavour to this dish. 

This dish goes well with chapati or roti and also as a side dish with any veg or nonveg meal. 

Very few basic ingredients are used in this recipe. No masala powders are used in this dish. 

Please note:

This dish tastes awesome with fresh peas. 

You can use frozen peas instead. 

Use chillies as per your taste. 

You can add any of your preferred vegetables. 

Here is a simple easy recipe:

Recipe:

Ingredients:

  • 1 cup chopped french beans
  • 1 cup chopped carrot
  • 1 cup fresh peas/ frozen peas 
  • 1/2 cup grated coconut
  • 1/4 tsp turmeric powder
  • 1 chopped tomato
  • Salt to taste. 

Seasoning Ingredients:

  • 1 tbsp coconut oil/ any oil
  • Pinch of mustard
  • Pinch of jeera/ cumin seeds
  • 1 tsp urad dal 
  • Few curry leaves
  • 1 chopped onion
  • 3-4 slit green chillies
  • 3 chopped garlic flakes 
  • 1/4" chopped ginger

Method:


Finely chop all the vegetables & keep aside. 

Heat oil in a pan. Add all the seasoning Ingredients one by one ( starting with mustard, jerra, urad dal , curry leaves) . 

Add rest of the seasoning Ingredients & fry till translucent. Do not burn. 

Add chopped tomato, turmeric powder. Mix well. 

Add chopped veggies. 

Add very little water(1/4th cup). Mix well & cook for 2-3 minutes. 

Add fresh peas. Mix well. Add salt to taste. 

Cover & cook till the veggies are partially cooked. 
Do not overcook the veggies. 

Add grated coconut. Mix well & cook for another 1 minute. 

Delicious, nutritious mixed veg dish is ready to serve. 
Tastes awesome with any meal.
