Kori Pundi/Rice balls with Chicken Gravy 


This is a super delicious one pot meal  often prepared during any family gatherings at my house.  I prepare this even during picnics. 

'Kori Pundi' is a tulu term which refers steamed rice balls mixed with chicken gravy. 

This is one of the finest delicacies of mangalorean region. 

This dish can be prepared easily if the rice balls are prepared and steamed well in advance. 

Preparing rice balls is time taking. Whenever i am buzy or lazy( lol) i prepare rice cake instead of rice balls. Kindly go through the discription below to understand more about this rice cake.  

This dish is the best choice for a weekend menu or any picnic parties. You can have it for breakfast, lunch or dinner. The curry tastes awesome on the 2nd day. 

Here is my way of preparing this dish. 


Please note:

Kindly add spices as per your choice. 

We prefer less spicy food. 

Try to use ghee or coconut  oil for seasoning to get awesome flavour & taste. 

We need more gravy for this recipe. So use required quantity coconut and onion. 

Prepare rice balls on the previous day to ease the cooking process.

RECIPE:

INGREDIENTS:

  • 1 kg chicken ( cleaned well)
  • 1/2 kg boiled rice
  • Salt to taste

INGREDIENTS FOR THE MASALA

  • 1 &1/2 Cup coconut 
  • 2 large onions
  • 6-8 garlic flakes
  • 7-8 kashmiri red chillies or byadagi
  • 4-5 red short chillies
  • 1 &1/2 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp pepper corns
  • Pinch of methi seeds
  • 3 cloves
  • 1/2" cinnamon stick
  • 1/4 tsp turmeric powder
  • 1/2 lemon size tamarind ( as required)


FOR SEASONING:

  • 2 tbsp ghee
  • 1 Sliced onion
  • Few curry leaves

METHOD 

Step 1:


Prepare rice balls with ground boiled rice. 



Soak boiled rice for a minimum 6 -8 hours. Grind to thick paste. Add salt  to taste. Slightly heat this paste on a pan or a vessel. 



Cool & mix well. Prepare rice balls & steam it in a steaming vessel for 20-30 minutes

Method for preparing Kori Pundi Curry:


STEP 1:




 Roast all the ingredients (except  tamarind ) (mentioned under Masala  ingredients) one by one with little oil & grind to a fine paste. Add tamarind while grinding.

STEP 3:




Heat ghee add seasoning ingredients, fry till slight brown.

 Add ground masala fry. Add cleaned  chicken piece,  masala water and cook till the chicken is 90% done. 

You need more gravy for this dish. So add water as required. 



Now add boiled Mutlin ( steamed rice balls)



Mix well. Take one good boil. 
Switch off the flame. 

Leave it aside for 15 minutes. 

Delicious kori pundi curry is ready to serve. 

Tastes awesome with any side dish. 

2nd Method:


Those who can't prepare rice balls can prepare this rice cake pieces easily. 



Spread the ground rice batter on a plate. Steam it for 20-30 minutes. 

Cool & cut it into small piece. Keep aside. 



Now add rice cake pieces instead of steamed rice balls to the gravy. Mix well.  Take a good boil.



Serve hot.
