Ragi Manni/ Finger Millet Halwa 


This  melt in mouth super delicious dessert is prepared with Ragi or Finger Millet in just 15 minutes ! 

Ragi / Finger millet is an excellent source of iron & calcium.  It's gluten free & low in calories. It is a great body cooler.  My mom used to prepare this dessert often during summer season. 

My mom used to prepare this on a large scale and we siblings used to take turns to stir the mixture with a long wooden spoon, staying far away from the pan as the mixture used to splash while boiling. 

I don't have patience to keep on stirring for a long time. I try  some shortcut method which will give same taste and texture.  I have been following  this my own way of quick  and easy method of preparing this dessert  within 15 minutes 

This is a very easy , delicious snack which can be prepared with only 5 ingredients. 

This dessert  is a very healthy, nutritious treat for your kids as well as adults and also  an excellent treat for any diabetic patients! 

Follow this super quick step by step recipe and enjoy this delicious , nutritious sweet with your family members. 

Please note:

Use jaggery as per your choice. 

Add only required quantity water. 

If you add more water, you need to cook this for a longer time. 

Here I have added ghee . You can add less or more quantity as per your choice. 

I have used 1/2 medium size coconut. You can use as per your choice. 


Recipe:

Ingredients:

  • 1 cup ragi. (150 ml cup)
  • 1/2 medium size coconut
  • 1/4 kg jaggery ( as required)
  • 1/4 tsp cardamom powder
  • 3 tsp ghee ( 1/2 tsp ghee for greasing the plate or moulds)
  • salt to taste
  • Around 4 & 1/2 cups of water. 

Method:


Wash & Soak ragi for 3-4 hrs. 

Drain the water and add to the grinding jar.  Add coconut. 

Add  1& 1/2 cup water and grind to a fine paste. 

Add 1 cup of water. Mix well . 

Now sieve this paste using a strainer or a cloth. ( I sieve this mixture directly to the cooking pan)

Transfer the leftover ragi husk to the blender jar and add 1 cup water.  Pulse  this mixture for 5 seconds and sieve again. 

Add 1 cup water to the husk and pulse again for 5 seconds.  Sieve. 

Ragi- coconut milk is ready. 
So you may require around 4 - 4 & 1/2 cups of water. 

Now add salt to taste and jaggery to the ragi mixture and start cooking stirring continuously on a High flame. 

Within 5 minutes you can see the mixture turns to this consistency. 

Reduce the flame and cook on a slow flame for about 3 minutes. Add 1 tsp ghee. 

Mix well & cook for another 3 minutes. Add 1 tsp ghee again. 
Now cook on a medium flame for another 3 minutes adding 1/2 tsp ghee. 

Cook on a high flame for another 2 minutes and you will this consistency. 

Add cardamom powder. Mix well.  

Pour it to a greased plate. ( grease plate with little ghee)

Cool for 1-2 hours. Cut into desired pieces. 

You can pour this mixture  into the greased idli moulds too. 

This manni is super soft, glossy and just melts in the mouth. So yummy.
