Soft Idly
Idli with sambar & coconut Chutney is one of the most popular South Indian breakfast.
These steamed rice cakes are made with rice & urad dal batter.
My family loves these soft fluffy idlis with dal tove or chutney. These idlis can be enjoyed with any meat/ fish or vegetable curry too.
The best & healthy choice for Breakfast, kids lunch box or evening tea.
This recipe is tried & loved by many of my friends and relatives.
Here I have used very little yeast for fermentation purpose. You can use 1/2 tsp methi( Fenugreek seeds) while grinding instead of yeast.
Here is a simple easy recipe.
RECIPE:
I have used 200 ml cup for measurement.
Ingredients:
- 1 cup dosa rice,
- 1/4 cup udad daal,
- 3/4 cup poha / Beaten rice (soaked for 5-10 minutes)
- 1/4 tsp yeast.
- Salt & sugar to taste
Method:
Soak dal & rice for minimum 2 hours.
Grind to a fine paste along with soaked poha/beaten rice.
Let the batter be slightly thicker than the dosa batter.
Add 1/4 tsp yeast, pinch of sugar & salt, mix well.
Cover and allow to ferment for atleast 4-5 hours.
(Fermentation process depends on the climatic conditions).
Fermented batter.
Boil sufficient water in the steaming vessel.
Meanwhile grease idli plates & keep aside.
Pour this batter into the greased idli moulds.
Steam for 10-12 minutes.
Steamed idlis are ready.
Remove the idli plate & allow it to cool for 10 minutes.
Gently unmold the idlis.
Fresh, fluffy idlis are ready to serve.
These super soft idlis just melt in the mouth.
These idlis are best enjoyed with sambar / dal tove or chutney for breakfast.
Same batter can be used to make sannas too.
