Chorizo Pulao/ Goan Sausage Pulao


Chorizo Pulao is one of the most loved delicacies of goan cuisine. This pulao is prepared with rice & Chorizo.  


Chorizo/ Goan Sausage 

Chorizo,  is a name given to Goa-special pork sausages that are strung together with a thread 

This is one of the easiest and flavourful one pot meal which can be relished  on a weekend dinner table . 

This dish needs minimal oil & spices as the key ingredient used in this recipe i.e. chorizo,  has it's own fat & spice contents. 

Chorizo releases aromatic oils when cooked, intensifying flavors and creating a delicious aroma. The sausage's fat content adds richness  to this dish & makes it so flavourful & unique. 

I  have added only garam masala powder & no other masala powers as i love to retain the natural  flavour & taste of chorizo. 

This dish needs very few basic ingredients available in the pantry & is the best choice for a quick  meal or any get-together parties. 

Please note:

1. I have not used any masala powders except  garam masala here. You can add as per your choice. 

2. I have used basmati rice. You can use any preferable rice. 

Recipe:

Ingredients:

  • 500 gm goan chorizo/ sausage
  • 2 cups basmati rice
  • 2 tsp ghee
  • Whole garam masala (3 cloves, 2 pieces of cinnamon, 2 cardamom, 1 star anise, 2 bay leaves).
  • 1 large sliced onion
  • 1 tbsp ginger garlic paste
  • 1 chopped tomato
  • 1 tsp garam masala powder
  • 1 tsp lemon juice
  • Salt to taste.

Method:


Wash & clean Chorizo .  Discard  the threads  and sausage casing. Take out the meat & keep it aside. 

Soak 2 cups of basmati Rice for 10 -15 minutes. Drain & keep aside. 

Heat 2 tsp ghee in a cooking  pan, add whole garam masala ingredients. Add 1 sliced onion. Fry well.  

Add 1 tbsp ginger garlic paste mix well. Add 1 tsp garam masala powder, 1chopped tomato.  Mix well.   

Add sausages. Mix well. Cook for 1-2 minute. 

Add  4 cups of water, lemon juice, salt to taste. Boil well. 

Add soaked & drained basmati rice. 

Mix well.   

Cover , cook for another 5-8 minutes. Cover & leave aside for another  5-6 minutes. 

Delicious chorizo pulao is ready to serve. 

It is so moist, flavourful and super delicious. 

Serve this with cucumber raita.
