Quickest way to break or grate hard jaggery Jaggery is one of the main sweetner used in many sweets.  Different types of jaggery is available these days. Soft jaggery is very easy to use whereas hard one is very difficult to break or grate.  Most of the time I find only hard jaggery in the stores   & struggle to break it .  Here is a quick & easy way to break it into smaller pieces or grate it.  Follow these simple easy steps: Place the jaggery block on a microwave-safe bowl.  Heat it in the microwave oven just for 20-25 seconds.( Heating time depends on the size of the block) Do not heat for a long time as it will start melting.  Remove and keep aside for 30 seconds.  It will turn soft & can easily be broken into pieces.  You can grate or scrape easily.  Please note: Heating time depends on the size of the jaggery block.  Around 200 gm piece needs only 20-25 seconds.  Smaller pieces needs less time &a

Kappa Rotti/Kailoli/ Vodu Dosa Kappa Rotti is a traditional dosa made on a clay pan. It is a delicacy of coastal Karnataka region. Clay pan is called as 'Vodu" in Tulu language , hence it is called as " Vodu Dosa". This dosa is prepared with  unfermented  rice batter which is poured in the centre of the hot clay pan and fried to perfection.  This dosa can be prepared quickly and easily if the rice is soaked well in advance as no fermentation is required.  This dosa has a unique flavour & looks as it has soft fluffy centre and  bubbles forming at the  edges.  No oil is used for frying. Coorgi Chicken  Coorg region is well known for its aromatic food & culture. Freshly ground aromatic spices are used in coorgi cuisine.  Coorgi Pork/ Pandi curry is the iconic pork dish from Coorg region. My hubby & our guests  just love my coorgi pork.  As my sons love only chicken dishes, i prepared this coorgi chicken which turned out as one of their favourite dish.  The main ingredient which gives authentic taste to this dish is the coorgi masala powder*,  which is mentioned in the recipe below.  The bright blackish colour and the unique taste comes from the souring agent called " Kachampuli" which is a coorgi vinegar.   This semi dry dish goes well as a side dish with any meal or as an appetizer/starter.  This authentic coorgi dish is served in almost every single restaurant in Coorg region with super delicious rice roti.  Recipe is easy & simple if the coorgi masala is prepared well in advance.  Try this delicious recipe.  Please note: 1. Banana Halwa

Banana Halwa  Halwa in 15 minutes??? Yes! You can prepare delicious banana halwa in just 15 minutes!  Banana halwa is my favourite sweet.  But i usually avoid buying it from the store as it contains lots of sugar & ghee/oil.  Whenever i crave for this sweet, i prepare it at home in a healthy way.  I prepare my own version of quick & easy, healthy banan halwa which needs very few ingredients available in the pantry.  Try using Nendran bananas for better results.  Here i have used only 2 bananas & 2 tbsp ghee.
