Kappa Rotti/Kailoli/ Vodu Dosa

Kappa Rotti is a traditional dosa made on a clay pan. It is a delicacy of coastal Karnataka region. Clay pan is called as 'Vodu" in Tulu language , hence it is called as " Vodu Dosa".

This dosa is prepared with  unfermented  rice batter which is poured in the centre of the hot clay pan and fried to perfection. 

This dosa can be prepared quickly and easily if the rice is soaked well in advance as no fermentation is required. 

This dosa has a unique flavour & looks as it has soft fluffy centre and  bubbles forming at the  edges. 

No oil is used for frying. Hot kappa Rotti straight from tawa is super tasty with a unique  earthy aroma as it is fried on a clay pan with crispy edges and a fluffy centre. 

Here is a simple easy recipe:

Recipe:

Ingredients:

  • 2 cups dosa rice
  • 1 cup fresh coconut
  • 1/2 cup cooked rice or soaked poha
  • Salt to taste. 
  • Water as required.

Method:


Wash and soak dosa rice for a minimum of 2-3 hours.
Drain, add coconut, cooked rice, required quantity water , & grind to a smooth paste.  I used cooked rice here.
 
Add this paste to a vessel. 
Add required quantity  water, salt to taste.  Mix to a dosa batter consistency. 
Batter should be nither too thick nor too thin. 
No fermentation required. 

Heat  a Clay pan on a medium flame. 
Wipe it with a wet cloth. 

Pour a ladleful of batter to the centre of the pan. Do not spread. 

Cook uncovered for about 1 minute. 

You can find these bubbles popping up. 

Cover & cook for another one to one & half minute.  Do not turn. 

Delicious kappa rotti is ready. 

Gently hold the edge of the  tawa  and with the help of a steel spatula, loosen the edges. 

Remove gently & serve hot. 
(After removing every dosa, clean the pan with the wet cloth). 
It's yummy with soft fluffy centre & crispy edges. 

Tastes awesome with chicken curry or any meat / fish curry. 
Can be served for breakfast with chutney & Sambar too.
