Carrot Oats Cake


Try this healthy carrot cake with oat flour. Quick and easy recipe with amazing results. 

Renovation work  of our house is going on on a full swing. I am missing my kitchen badly. All the kitchen items are packed & stored in different rooms. 

Home cooked food is supplied to us. My family is missing my food & especially all the healthy snacks which i used to prepare. 

Not many equipments, not many vessels available. The only cooking i am doing is preparing tea & baking healthy cakes using  my own shortcut methods. 

I baked this healthy carrot cake with oat flour using my blender jar & it turned super delicious.  I used very less sugar as i added few dates, raisins and tuty fruity which has natural sweetness in it.  

I just mixed all the ingredients in the blender  jar & prepared this carrot cake mixture.   The result was amazing! It was so moist and super delicious!

Shared this cake with the workers too & they truly relished this yummy carrot cake. 

Unfortunately i couldn't do any presentation as everyone was very hungry & it got vanished within no time. 

Please note:

I used very less sugar as i added few dates, raisins and tuty fruity which has natural sweetness in it.  Kindly use sugar as per your choice. 

You can use honey or jaggery too. 

I used very little oil too.   You can use butter or 1/2 cup oil if you want a richer version. 

I used few almonds too. It's optional. But tastes awesome with few added almonds. 

Recipe:

(I used 200 ml cup for the measurement)

Ingredients:

  • 1 cup rolled oats
  • 1/4 cup almonds ( optional) 
  • 1 medium size carrot
  • 3 eggs
  • 3 tbsp sugar
  • 3 -4 tbsp oil
  • 2 tsp tuty fruity
  • 6 seedless dates
  • 2 tbsp raisins
  • Pinch of salt
  • 6 drops of vanilla essence
  • 1/2 tsp baking powder
  • Pinch of baking soda
  • 1/4 tsp cinnamon powder 

Method:


Dry roast 1 cup oats. Keep it aside. 
Dry roast almonds. 
Put oats & almonds in the grinding jar & make fine powder. 

Peel & chop carrot and add to the grinding jar & pulse for 10 seconds. 

Add this carrot to oats almond flour & add 2 tbsp tuty fruity. 

Chop dates & keep aside. Add  2 tbsp raisins. 

In the same grinding jar add eggs, sugar, oil, pinch of salt, vanilla essence, pulse for 20 seconds. 

Now add baking powder, baking soda cinnamon powder & pulse just for 6 seconds. 

Now add the flour mixture & pulse just for 4-5 seconds. 

Add dates & raisins & pulse just for 3 seconds. 


Cake mixture is ready. 
Pour this in a greased baking tray. 

Bake in a preheated oven  at 180°C for about 30 minutes. 

Delicious carrot cake is ready. 

Cool completely & slice as per your choice. 

Super moist, delicious, healthy carrot cake is ready.
