Apple Oats Muffins

Apple Oats Muffins (Healthy breakfast muffins) These healthy Breakfast Muffins are a great way to start the day.  These contain no all purpose flour(maida), no butter &  very less sugar. Hence could be the best choice for a quick snack for diet concious people.  They taste best when served warm. These can be prepared & stored in the refrigerator for about 15 days.   Just reheat in the microwave for 20 seconds & serve warm.  The preparation is quick & easy with few ingredients available in the pantry. Here I have added apple.  You can add any of your favourite fruits or nuts.  You can even add few berries and chocolate chips too.  Here is my way of preparing this yummy , healthy  breakfast muffins.  Recipe: ( I have used 150ml cup for the measurement) Ingredients: A.  1-2 tbsp sugar 2 tbsp honey 2 eggs 1/4 cup virgin coconut oil 1/2 cup milk Pinch of salt 3 cloves  B.  1 cup dry roasted oats 1 cup finely chopped apple 1/2 tsp baking powder Pinch of baking sod

Squid Sukka

Squid sukka Squid is eaten in many cuisines. The culinary name 'calamari' is often used for squid dishes.  Squid is a good source of protein, omega-3 fatty acids, vitamin C, iron and calcium.  There are many ways to prepare squid dishes. It can be roasted, fried, baked or cooked as a dry or semi dry dish.  Among all varieties, my family just loves this sukka dish.  This dish can be served as an appetizer or as a side dish with any meal. Tastes awesome with chapathi, roti or neeru dosa.  I prefer this simple easy way of preparation where no grinding is required.  Here is my way of preparing this sukka dish.  Please note: Use spices and masala powders as per your choice.  Squid takes very less time to cook. Overcooked squid turns rubbery.  I have used Bafat powder here. Batani- Bajil / Green peas with Beaten Rice( Poha)

Batani - Bajil I tasted this unique breakfast dish for the first  time when we visited one of the popular veg restaurants in Mangalore recently.   The owner of this restaurant always gives me some newly introduced dishes to taste & tells me to give an honest review. This time he gave me this particular dish called ' batani - bajil'   as a  complimentary breakfast.  We tasted it & found it really tasty and healthy too.  I tried my level best to prepare the same combo in my own style & it turned out just as tasty as the one i tried at the restaurant.   Earlier I have prepared other Mangalorean popular combos like ' sajjige- Bajil' , kadle- bajil', 'pandengi- bajil' wherein poha or beaten rice is served with upma , cooked chickpeas or green gram.  Batani Bajil is a tulu name. Try this!  It's a creamy coconut gravy with a perfect blend of aromatic spices & fresh herbs.  A truly delightful combo to trigger your taste buds!  This creamy, yummy, flavourful gravy is loved by most of my guests and is one of my family's favourite dish too. This green creamy gravy is a  perfect blend of aromatic spices, fresh herbs and  coconut milk.  The  soup of mutton makes this gravy so glossy and  flavourful.  This curry goes extremely well with appams, sanna, panpole, chapathi or even with plain rice/ ghee rice.  This I am sure is truly a delightful combo to trigger your taste buds for a weekend lunch or dinner.  Please note: Use spices as per your choice.
