Apple Oats Muffins

(Healthy breakfast muffins)


These healthy Breakfast Muffins are a great way to start the day. 

These contain no all purpose flour(maida), no butter &  very less sugar. Hence could be the best choice for a quick snack for diet concious people. 

They taste best when served warm. These can be prepared & stored in the refrigerator for about 15 days.   Just reheat in the microwave for 20 seconds & serve warm. 

The preparation is quick & easy with few ingredients available in the pantry. Here I have added apple.  You can add any of your favourite fruits or nuts.  You can even add few berries and chocolate chips too. 

Here is my way of preparing this yummy , healthy  breakfast muffins. 

Recipe:

( I have used 150ml cup for the measurement)

Ingredients:

A. 

  • 1-2 tbsp sugar
  • 2 tbsp honey
  • 2 eggs
  • 1/4 cup virgin coconut oil
  • 1/2 cup milk
  • Pinch of salt
  • 3 cloves 

B. 

  • 1 cup dry roasted oats
  • 1 cup finely chopped apple
  • 1/2 tsp baking powder
  • Pinch of baking soda
  • 1/2 tsp cinnamon powder

C. 

  • Handful of chopped walnuts
  • Handful of raisins 

Method:


Dry roast oats for 1-2 minutes & keep it aside. 

Just add all the ingredients under A to the grinding jar. ( Milk i added after clicking picture. )

Pulse for 10-15 seconds. 

Pour this mixture into to a mixing bowl. 

Add all the ingredients mentioned under B. Mix gently. 

Add the ingredients under C. Mix gently. 

Pour the required quantity mixture into a greased muffin  tray. 

Bake in a pre-heated oven at 180°C for 20-25 minutes. 

Delicious , healthy breakfast muffins are ready. 

Can be served warm or cold. 

They are so moist, healthy &  so yumm. 

Enjoy these soft, spongy, moist muffins with your loved ones. 

Please note:

I have used very less sugar here as i used honey , raisins & apple which are naturally sweet. You can add only honey for this recipe or can add jaggery or sugar as per your choice . 

You can add sugar as per your choice. 

I have used virgin coconut oil. You can use butter or any oil of your choice. 

Use dry fruits, berries or fruits as per your choice. 

I have added cinnamon powder & cloves for flavour. You can add vanilla essence if you wish.
