Rava Laddu


These are my hubby's most favourite laddus & i keep preparing them often. 

They are aromatic, moist & just melt in your mouth.   

These laddus are made out of Semolina ( Rava/ Suji) , sugar, coconut, ghee, cardamom & few dryfruits.  They are also called as 'Suji Laddu'. 

The dry fruits added to semolina gives awesome crunch & richness to this sweet. 

This is one of the most loved sweet among Christmas sweets( kuswar) or any festive sweets. 

The aroma of  roasted semolina in ghee with dryfruits & cardamom, just fills in the entire kitchen.

These laddus are prepared in different ways. But i feel this is the easiest recipe which i have been preparing from ages.  I am sure you will love this super easy , tasty recipe. These remain soft & delicious for few days. 

Here i have explained 3 different ways of preparation. 1st one is with sugar and the 2nd method is a healthy option with Coconut sugar. 3rd way is also a healthy option where jaggery is used instead of white sugar.

Please note:

I have used 200 ml cup for the measurement.

Make sure to use pure ghee for authentic flavour & taste. 

I use less sugar. You can use equal amounts of sugar & rava. ( 1:1 proportion)

1st method:

Rava laddu with Sugar 

Ingredients:

  • 1 cup Bombay Rava
  • 1/2 cup grated coconut
  • 3/4 cup sugar ( or 1 cup)
  • 3/4 cup water 
  • Few dry fruits of your choice 
  • 1/4 tsp cardamom powder. 
  • 2 +1 tbsp ghee
  • Pinch of salt 

Method :


Mix Rava &  grated coconut & keep aside for 10 minutes. 

Heat 1 tbsp ghee & roast all dryfruits & keep aside. 

In the same pan add 2 tbsp ghee &  rava+ coconut mixture . Roast on a slow flame for 4-5 minutes till it is aromatic. 

Remove & keep aside .

In the same pan, add sugar & water. Boil well till you get slightly sticky consistency.  No need to get one thread consistency.  Switch off the flame. 

Add rava mixture, cardamom , pinch of salt & mix well. Cover & keep aside for 10-12 minutes. 

You will get this type of soft sticky mixture. 

Apply little ghee on your palm & prepare laddus. 
These are so moist, aromatic & super delicious. 

Store in an airtight container. Stays well for about a week at room temperature & for  nearly 2 months in the refrigerator. 

2nd Method :

Rava laddu with Coconut Sugar 




Same laddus can be prepared in a healthy way using coconut sugar instead of white sugar. 


Coconut sugar 


coconut blossom sugar is a palm sugar produced from the sap of the flower bud stem of the coconut palm.
coconut sugar, tend to have a higher content of minerals and antioxidant which is much healthier than white sugar



Same method. Instead of white sugar, use coconut sugar. 

3rd method:

Rava laddu with Jaggery 



Healthy Rava Laddu 

My hubby is so fond of rava laddus. I try my best to feed him healthy stuff. Tried to prepare the same laddus in a healthy way by using jaggery instead of sugar.  

Tasted so moist and super delicious. 

Kindly go through the recipe. 

Please note:

Use the same ingredients mentioned above except sugar. Here i have used jaggery and desiccated coconut.

Use jaggery as per your choice. I used 3/4 cup jaggery. 

Here i have coated these laddus in desiccated coconut. You can skip this if you wish. 

Recipe:

Ingredients:

  • 1 cup Bombay Rava
  • 1/2 cup grated coconut
  • 3/4 cup jaggery ( or 1 cup)
  • 3/4 cup water 
  • Few dry fruits of your choice 
  • 1/4 tsp cardamom powder. 
  • 2 +1 tbsp ghee
  • Pinch of salt
  • 1/2 cup desiccated coconut for garnishing ( optional)

Method:



Roast rava + coconut along with dry fruits in 2 tbsp ghee till aromatic. Remove and keep aside. 



Boil 3/4 cup jaggery with 3/4 cup water till sticky consistency. 



Add roasted rava. Pinch of salt, cardamom powder. Mix well for 1 minute. Close & keep aside for 10-15 minutes. 
Apply little ghee on your palm and prepare laddus. 



Spread desiccated coconut in a plate. Add laddus and coat on all sides. 




Flavourful, super moist and delicious laddus are ready to serve.
