Vegetable Upma
This is one of the easiest, healthiest & most loved south Indian breakfast.
This can be served as breakfast or a quick tea time snack .
I have added my family's favourite vegetables. You can add any veggies of your choice. Here i have used green peas, carrot, beans & a small tomato. These veggies are rich in fibre and nutrients.
I have used roasted rava. You can use normal rava too. But needs to be roasted before the preparation.
This high fibre, healthy breakfast is an excellent choice for your kids lunch/ snack box.
Try this nutritious breakfast recipe.
Recipe:
Ingredients:
- 1 cup roasted rava
- 1 cup chopped mixed veggies
- 2 tbsp oil
- 1 chopped onion
- Pinch of mustard
- Few curry leaves
- Pinch of jeera
- 1/2 tsp urad dal
- 2-3 chopped green chillies
- 1/4" chopped ginger
- A big pinch of turmeric
- 1 tbsp lemon juice
- 3 cups of water.
- Salt to taste.
- Pinch of sugar
Method:
Chop all the required vegetables & keep it aside.
Heat oil. Add mustard, jeera & allow it to splutter. Add urad dal. Fry. Add onion, green chillies & ginger. Fry till translucent.
Add vegetables. Toss & fry for 1 minute.
Add 3 cups of water, salt to taste, lemon juice & turmeric powder.
Allow it to boil.
Gently add rava & mix well. Cover & cook for 2-3 minutes.
Stir & cover. Switch off the flame. Allow it to cook in its steam for another 2 -3 minutes.
Delicious Vegetable Upma is ready to serve.
Serve with a cup of hot tea.
