These healthy, nutritious Makhana ( Fox nut) laddus are prepared with jaggery & few added dry fruits.
Makhana is rich in nutrients, high in antioxidants, helps to stabilize blood sugar levels and heart healthy too. That's why the popularity of Makhana snacks is growing day by day.
This is an ideal tea time snack and an excellent choice for your kids snack box.
These laddus can be prepared easily and quickly with few basic ingredients and can be stored at room temperature for about a week & for about a month in the refrigerator.
Recipe:
I have used 250ml cup for measurement
Ingredients:
- 3 cup makhana
- 1 cup fresh coconut or desiccated coconut
- 1/2 cup dry fruits ( as required)
- 3/4 cup jaggery
- Little cardamom powder
- 1-2 tbsp ghee
Method:
Dry roast Makhana for 3-4 minutes till they are crispy.
Slightly cool & add to mixer grinder.
Pulse it for 10-20 seconds .
Makhana powder is ready.
Dry roast coconut for 3-4 minutes till it turns aromatic. ( Desiccated coconut can be roasted just for a minute)
Remove & add it to makhana powder.
In the same pan add ghee & roast dry fruits.
Add it to makhana coconut mixture.
In the same pan, add jaggery with 1/4 cup of water and boil.
Boil for 3-4 minutes till it turns thick foamy consistency.
Reduce the flame & add the makhana mixture.
Mix well till everything is well combined. Switch off the flame.
Slightly cool for 2-3 minutes.
Roll out laddus. I prepared around 22 medium size laddus.
Delicious, nutritious, super healthy makhana laddus are ready to serve.
