Fish Roce Curry

Fish Roce curry/ Fish curry with coconut milk  Among all types of fish curries,  roce curry is my most favourite one.  'Roce' means 'coconut milk' in konkani.  This  coconut based curry is so flavourful & super delicious. Here , fish is seasoned with aromatic Indian spices and simmered in creamy coconut milk.  This curry goes extremely well with boiled rice or sanna, dosa & neeru dosa/ panpole.  Butter fish is an excellent choice for this curry. You can also use king fish, pomfret, rawns( Indian salmon) etc for this curry.  This was my parents favourite curry . My dad used to get huge fish fillets & mom was an expert in cooking this delicious curry.  Try this delicious Roce curry with your favourite fish.  Please note: Kindly use spices as per your preference.  Try to use coconut oil or ghee for seasoning. Christmas Pudding Christmas pudding is sweet dried-fruit pudding traditionally served as part of Christmas dinner in Britain and other countries.  It is like a dense mixed fruit cake made of dry fruits , candied fruit peel , citrus zests , butter, sugar , flour & rum or brandy.  The dry fruits & the spices added gives awesome flavour & richness to this yummy pudding.  The key difference between fruit cake and Christmas pudding is that fruit cake is a cake containing dried fruits, nuts and spices, made with butter, sugar and baked in the oven while Christmas pudding is Steamed .  I tried this pudding for the first time & it tasted heavenly.   Super moist, super delicious & my family members just loved it.  No oven is required to prepare this dish as it is steamed in a steaming vessel.  It is a super easy dessert  which can be prepared quickly but only needs time in the steamer to turn into a classic festive dessert.  I have used only 1/2 cup of sugar as t

Vegetable Upma This is one of the easiest,  healthiest & most loved south Indian breakfast.  This can be served as  breakfast or a quick tea time snack .  I have added my family's favourite vegetables. You can add any veggies of your choice. Here i have used green peas, carrot, beans & a small tomato.  These veggies are rich in fibre and nutrients.  I have used roasted rava. You can use normal rava too. But needs to be roasted before the preparation.  This high fibre, healthy breakfast is an excellent choice for your kids lunch/ snack box.  Try this nutritious breakfast recipe.  Recipe: Ingredients: 1 cup roasted rava 1 cup chopped mixed veggies  2 tbsp oil 1 chopped onion Pinch of mustard Few curry leaves Pinch of jeera 1/2 tsp urad dal 2-3 chopped green chillies 1/4" chopped ginger A big pinch of turmeric 1 tbsp lemon juice 3 cups of water.  Salt to taste.  Pinch of sugar  Method: Chop all the required vegetables & keep it aside.

Raw Banana Sukka( wedding style)/ Kele sukhe This is one of the traditional Mangalorean dishes, typically served at  Roce ceremonies ( pre wedding ritual among Mangalorean Catholics) It is served with boiled rice, bun, mutton Polov & Pork Sorpothel.  This flavourful dry dish goes very well as a side dish with rice and  fish curry or mutton Polov. It can also be served with chapathies or rotis. This dish tastes awesome when a tablespoon of ' Korpo'(optional) is added .  ' korpo' recipe is mentioned below.  Here is my way of preparing raw banana sukka.  Recipe: Ingredients: 4 raw bananas 1 tbsp ghee+ 1tb sp oil 1 onion ( sliced) Pinch of mustard Pinch of jeera Few curry leaves 5 crushed garlic flakes 1 chopped tomato 1 tsp sambar powder 1/2 tsp kashmiri chilli powder 1 tsp Bafat powder * 1 cup grated coconut 2 tbsp tamarind pulp Salt to taste 1 small piece of jaggery 1 tbsp korpo*( optional) Please note:  Instead of bafat powder you can use 1/2 tsp red chi
