Poha Laddu/ Flattened rice Laddu


Poha or flattened rice/ rice flakes is used in many sweet dishes. Poha laddu is one among them. 

This is a very easy, quick & delicious recipe which can be prepared with very few basic ingredients. 

Poha has lots of health benefits. It is a good source of healthy carbohydrates, easily digestible , rich in iron ,  low in calories &  gluten free. 

To have a healthy option,  I have used jaggery in this recipe. You can use sugar instead. This could be the best & healthy snack for your kids. 

I have used few dry fruits here. You can add any of your favourite dry fruits or can skip dry fruits if you wish. 

Please note: Here i have used normal thin poha. You can use any varieties of poha. 

Use jaggery as per your preference. 


Recipe:

Ingredients:

  • 1 cup poha/ flattened rice ( 200 gms)
  • 1/2 cup grated coconut
  • 1/4 -1/2 cup jaggery
  • Little cardamom powder
  • 1/2 cup mixed dry fruits
  • 2 tbsp ghee. 

Method:


In a wide pan, add 1 cup poha & 1 tbsp ghee. Mix well & fry on a slow flame for 2-3 minutes till it turns crispy. 

Cool & make a coarse powder  in the mixer grinder. 

In the same pan roast coconut for 2 minutes & keep it aside.
 
In the same pan heat 1 tbsp ghee, add all dryfruits. Fry for 1 minute,  remove & Keep it aside. 

Now add  jaggery to the same pan add 1/4 cup water.

Boil well till you find this thick foamy texture. 

Switch off the flame, add poha, coconut ,  dryfruits & cardamom powder. Mix well.  

Leave aside for 2 minutes. 

Prepare laddus. 

They are super moist & super delicious. 

Stays well for about 4-5 days at room temperature. Can be stored for about a month in the refrigerator.
