Karathen Sukka( Bitter gourd Sukka)


This particular vegetable dish is disliked by many but it's one of my most loved traditional dishes.  It tastes yummy on the second day. 

This bitter vegetable is called as 'Kanchala' in tulu language & 'Karela' in Hindi. 

This healthy, diabetic friendly dish goes well with rice , chapathi or can be served as a side dish with any meal. 

Even though this vegetable has a bitter taste, this particular dish has a unique sweet, sour , bitter & spicy flavours which makes this dish so special.  This dish tastes awesome only if the sweet , sour & spicy flavours are balanced perfectly.  

This is one of the traditional dishes served during Nativity feast ( harvest feast)


RECIPE:

INGREDIENTS:

  • 1/2 kg  bitter gourd
  • 1 cup coconut
  • 1 medium onion ( sliced)
  • 2 tbsp ghee
  • 6 garlic flakes ( crushed)
  • 4 hog plums ( ambade) ( optional) or 1 tomato 
  • 2 tsp tamarind pulp
  • 1 tbsp bafat powder
  • 1 tsp sambar powder
  • 1/4 cup jaggery ( as required)
  • Salt to taste

METHOD:
Select good quality bitter gourd with bright green colour.  Wash well. Cut off the top & tail  and slit vertically. Scoop out all the seeds & cut into thin slices. 
Add 1/2 tsp salt & mix well.  Keep it aside for half an hour. Squeeze it well & discard all the water. ( You can retain if you wish)

Wash & clean hog plums and slightly crush them. 

Heat 2 tb  ghee & add onion, crushed garlic. Fry till golden brown. 

Add bitter gourd. 

 Fry on a slow flame for 3-4 minutes. 

Add masala powders, coconut. Mix well. 

Add jaggery, tamarind pulp, hog plums mix well. 
Cover & cook for 10-12 minutes till everything is well combined. 

Delicious, flavourful bitter gourd sukka is ready.

Please note:

You can add only tamarind pulp instead of hog plums( ambade). You can use 1 tomato too. But while adding hog plums, use very little tamarind pulp as the hog plums  have sour taste. 

Use masala powders as per your taste. 

Instead of bafat powder you can use 1 tsp red chilli powder, 1/2 tsp coriander powder , 1/4 tsp jeera powder & very little garam masala powder.
