Here is the best option. It's a  One pot meal with lots of veggies & meat .  It is called as 'one pot meal' as it  provides protine, vegetables and grains in one pot.

You can add any vegetables , meat or eggs.  I have used veggies as per our preference. This is the best dish to feed veggies to your kids.  

This is such a delicious meal where you don't require any side dish.   I have served it with raitha. 

This is my favourite quick meal dish which i prepare almost every weekend. 

Try this yummy dish and i am sure everyone will love it. 


Recipe:

Ingredients:

  • 3/4 kg chicken pieces ( cleaned)
  • 2 tbsp ghee
  • 2-3 tsp pepper powder ( as required)
  • 2 tsp garam masala powder
  • 1 tsp chopped garlic
  • 1/2 tsp chopped ginger
  • 1-2 green chillies 
  • 1 large diced onion
  • 1 green capcicum ( diced)
  • 1 red or yellow capcicum ( diced) 
  • 10-12 french beans
  • 1 carrot  ( chopped into bigger chunks)
  • 10 -12 mushroom ( bigger chunks)
  • 1 small brocolli  (chopped)
  • 4 cups of vegetable or chicken stock ( see note)
  • 2 cups basmati rice
  • 2 cloves, 1 cardamom 
  • 1/2"cinnamon, 1 bay leaf 
  • 1 tbsp lemon juice
  • Salt to taste. 

Method:


Wash & Soak basmati rice for 15 minutes. 
Drain & keep aside. 


Heat 2 tbsp ghee in a cooking pot, add chicken pieces. Fry for 1 minute on a high flame. 

Add pepper powder & garam masala powder, salt to taste & fry well for 3-4 minutes. 

Remove & keep aside. 

In the same pan, add garlic, ginger & fry for 30 seconds. 

Add onion, chillies & fry on a high flame for 30 seconds. 

Add beans, carrots, mix well & fry for another 1 minute. 

Add capsicum, mushroom, brocolli & mix well. 

Add chicken stock, lemon juice, salt to taste. Add cloves, cardamom, cinnamon & bay leaf.  Mix well & boil. 

Add basmati rice. Mix well. 

Gently place the roasted chicken on top. 

Cover & cook for 8-10 minutes. 

Delicious pepper chicken pulao is ready to serve. 

Gently mix with a fork. 

Serve with raitha or pickle. 

Its so moist &  yummy. 
Enjoy this delicious dish with your loved ones. 

Please note: Use spices as per your preference.  
I have used chicken stock. You can use normal water or vegetable stock instead. 

Chicken stock:

Chicken stock can be prepared easily at home . Add few chicken bones, wings, back & neck pieces to the pressure cooker with 1 onion, carrot & a bay leaf. Add 4-5 cups of water & cook for 10-15 minutes.  You can add any veggies or aromatics of your choice. 
Cool & strain the broth. You can store in a freezer for about 2 months.
