Instant Pundi/Mutlin/ Rice Dumplings

INSTANT  PUNDI/ MUTLIN/RICE DUMPLINGS 


How many of you love Pundi/ mutlin and have absolutely no time to prepare?? 

Traditional pundi recipe requires soaking of boiled rice, grinding, heating the batter & preparing pundi/ mutlin/ rice dumplings and steaming.  This is time consuming & tiring. 

Here is a very simple way of preparing rice dumplings which need no soaking of rice & no grinding.  

This recipe is very helpful to working mothers or when you have unexpected guests.  This quick & easy recipe needs no prior preparations & the end result is exactly like the one which is prepared in a traditional way. 


The main ingredient Pathiri podi is a special rice flour which is available in supermarkets. 

Here is the recipe for this easy pundi/ mutlin. 

RECIPE:

INGREDIENTS:

  • 1 cup pathiri powder 
  • 1/2 cup rice flour
  • 3/4 cup grated coconut
  • Salt to taste
  • 1&1/4 cup of water. 

METHOD:


In a vessel, add pathiri powder, rice flour, coconut, salt to taste. 

Add water & knead to soft thick dough. Cover & keep aside for 5 minutes. 

Take required quantity dough, make pundi/ mutlin. 

Steam in the steaming vessel for 25 - 30 minutes on a medium flame. 

Delicious instant rice pundi is ready to serve. 

Allow it to cool for 5-10 minutes and serve for breakfast, lunch or dinner. 

Can be served for breakfast with sambar or chutney. 

It can be served for lunch or dinner with meat or fish curry.  Tastes yumm with chicken curry. 

Goes excellent with leftover pork bafat.
