Quick Fruit Cake

Quick Fruit Cake Here is the easiest way to prepare delicious, moist fruit cake.  You dont require any blender or electric beater  in this recipe. All you need is  a saucepan & a wooden spoon for mixing the ingredients.   This cake can be prepared only with raisins or you can add any dry fruits of your choice.  Try this delicious recipe.  RECIPE I have used 200ml cup for the measurement.  INGREDIENTS: 1 cup fresh orange juice 3/4 cup raisins 1/4 cup mixed dry fruits 3 eggs 1 cup all purpose flour 3/4 cup brown sugar/ white sugar  100 gms butter 1/2 tsp vanilla extract 5 drops orange extract Pinch of salt 1/2 tsp  chopped orange peel 1/2 tsp baking powder Pinch of baking soda METHOD:  Extract juice of  orange  & keep aside.  Heat 1 cup orange juice in the sauce pan. Add raisins. Boil well. Simmer for 3 minutes. Switch off the flame.  Add butter, sugar. Mix well.  Add mixed dry fruits.  Vanilla essence & orange extra

Jeera Rice

JEERA RICE Flavourful, super delicious and easiest recipe!  This simple, quick recipe always helps me when i have sudden guests at home. This delicious rice has a unique flavour of jeera( cumin seeds) and can be the best dish on a weekend dinner table.  This rice can be served with any meat or vegetable korma curry, butter masala curry or can be served with simple dal or  raitha.  My family loves this rice with meat curry. Its one of their favourite dishes.  I prefer peas and carrots in this dish. You can skip or add any preferred vegetables.  Please note: Select good quality basmati rice for the best results.  RECIPE: INGREDIENTS: 1Cup basmati rice(200 gms) 2 cups  water 1 tsp cumin seeds  Salt to taste 1 tsp lemon juice.  2 tbsp ghee 1/4 cup fresh /frozen peas(optional) 1/4 cup diced carrot (optional) METHOD: Wash & rinse basmati rice and soak for 15 minutes.  Drain rice & keep aside.  Heat  2 tbsp ghee in a pan. KUBE THEL PIYAO/ CLAMS CURRY This is a very simple, easy, tasty dish which we used to enjoy during our childhood days.   'Thel' in konkani means oil & 'piyao'  means onion. The soup of this gravy is enriched with the flavours of onion & oil. Pure coconut oil gives awesome flavour to this dish.  This delicious dish needs few basic ingredients available at home & can be prepared easily without any ground masala paste.  This dish has a unique flavour & taste of clams & the soup is so delicious to relish with rice( congee). Please note: Make sure to select fresh clams.  Use chillies as per your choice.  RECIPE: INGREDIENTS: 1/2Kg fresh clams 2 medium size sliced onions 3 green chillies ( slit) 6 garlic flakes (chopped) 1/2" ginger (chopped) 1 medium size tomato Pinch of mustard Pinch of turmeric powder 1 spring curry leaves  2tbsp coconut oil.  Salt to taste.  METHOD: Select fresh clams.  Wash & rinse the clam

PORK PICKLE    Here is  another treat for pork lovers! I have posted many pork recipes in my blog and i feel Pork pickle is the most simple and the easiest dish among all pork dishes.   This spicy, hot, flavourful pickle is the best side dish with boiled rice and vegetable curry. This delicious pickle can be best enjoyed with any of your favourite drinks too.  The dish is so delicious that I am sure you can't stop eating once you start.  I love this pickle with boiled rice & mutton polov.  Here is a simple , easy way to prepare this pork pickle.  Please note:  The chillies used can be increased or decreased as per your preference. We prefer less spicy food.  Use diluted vinegar to clean leftover masala in the grinding jar.( 1/2 cup vinegar with 1 cup boiled & cooled water)  You can use any oil of your choice.
