STIR FRIED VEGGIES WITH GRILLED FISH This is one of the the best options for a quick, healthy dinner. Many a times we have this as our light meal.  Its simple, quick & super healthy.  This can also be  served with steamed rice as a side dish.  One can have lots of variations to this recipe. Instead of fish, you can add any meat of your choice,  few nuts and some green leafy vegetables too. I fry fish in the grill pan & in the same flavoured oil i stir fry all the veggies.  While stir frying veggies, make sure to add all the hard veggies first and then add soft veggies.  Make sure to retain the freshness of crispy crunchy veggies by frying them  just perfect. Overcooked veggies turn soft & soggy.  Veggis should be cut into uniform size to cook evenly.  RECIPE FOR GRILLED FISH: I have used black pomfret.  We prefer mild spices for marination. BANGUDE PULI MUNCHI/ TANGY-SPICY MACKEREL CURRY Bangude puli munchi is a very famous dish of mangalorean cuisine which is loved by most mangaloreans.   'Puli munchi' is a  tulu term which refers to a 'tangy spicy' flavoured curry which i am sure will tickle your taste buds.  This is  my hubby's most favourite fish curry.  Fish is cooked with tangy spicy masala on a slow flame which makes this dish so flavourful & super delicious.  This dish tastes  better on the next day as all the flavours & spices are well absorbed  by  the fish pieces.  The taste depends on the quality of fish you use. Make sure to use fresh mackerels.  (Pls note: we prefer less spicy food. Kindly use spices as per your choice) RECIPE: INGREDIENTS: 10 medium mackerel/ bangda fish (cleaned) A. FOR MASALA: 8-10 Kashmiri red long chillies/ Byadagi chillies 4 red short chillies 1tsp coriander 1/2tsp geera 1/2 tsp pepper 6 garlic flakes 2 medium onions 1/4" ginger

Beef in Oyster Sauce

BEEF IN OYSTER SAUCE Beef in oyster sauce with fried rice is our favourite combo.  This flavourful dish can be served as an appetizer or as a side dish with fried rice or noodles. We need tender beef for this recipe. The regular beef we get in Mangalore is hard & takes longer time to cook. So  i always prefer beef veal   for this recipe. You can use tender beef or if you are using regular beef, you can boil beef pieces well & then cut into thin slices & follow the recipe.  Here I used tender beef for this recipe.  RECIPE: A. Ingredients for marinating beef: 1 egg 1 tsp pepper 1tbsp soy sauce 1 tbsp ginger garlic paste  1 tbsp oyster sauce Pinch of soda bicarb 2 tbsp cornflour Salt to taste.  B. Other ingredients: 1/2 kg beef 2 slit green chillies 1 sliced onion 1/2" chopped ginger 6 garlic cloves chopped Little spring onion.  Carrot & capcicum ( optional) 3 tbsp oil. C. CHICKEN BIRYANI Chicken biryani with mint raita is my family's most favourite meal. A good quality basmati rice, saffron and garam masala powder are very essential to prepare delicious biryani.  I have used spices as per my choice. Kindly increase or decrease as per your needs.  Fresh mint leaves from my kitchen garden gives excellent flavour & taste to this yummy biriyani.  Ingredients for masala: (Kindly use ingredients as per your choice) 6-8 green chillies 100 gms coriander+ mint leaves 1pod garlic 1" ginger.  1 large onion Other ingredients: 3 large onions sliced 1-2 tbsp garam masala powder Ghee as per your choice 1cup curds Juice of 1 lemon or tamarind pulp Salt to taste.  1 kg chicken  Saffron water.
