Rava coconut cake
My aunt introduced me this dish as 'rava bath' long ago. But i prefer to call it as 'Rava Coconut cake'.
Simple basic ingredients! Awesome flavour!! Super delicious cake!!
This is the most enjoyed cake in my house.
The aroma of coconut, cardamom and ghee spread in the kitchen while baking this cake is just divine!!!
This dish can be prepared using butter. But ghee gives an excellent aroma & taste to this cake. Try using ghee in this recipe. You can use desiccated coconut too instead of fresh coconut.
Here is a simple easy recipe :
I used 200 ml cup for the measurement.
INGREDIENTS:
- 1 cup bombay rava/ semolina( dry roasted)
- 1 cup freshly grated coconut
- 3/4 cup ghee
- 2 eggs
- 3/4 cup sugar ( as needed)
- Pinch of salt,
- 1/4 tsp baking powder,
- Pinch of baking soda.
- 4 cardamoms
- 1/2 -1 cup milk( as needed)
- Dry fruits of your choice(optional)
METHOD:
Add a pinch of salt. Roasted rava, baking powder & baking soda, milk & just pulse till everything is mixed well.
Add only required quantity milk to have dosa batter consistency mixture.
Grease the baking tin with little ghee.
Slice it as per your choice.
Enjoy with your loved ones.
