COLOCASIA STEM CURRY/ BALNTHICHE KALE ALU


Colocasia plant has lots of health benifits and  is very rich in fibre.  The stems used here are black in colour and called as kale alu in konkani. This variety of colocasia has got lots of medicinal properties. 

Because of its health benefits, this special  colocasia stems  curry is  given on 4th or 5th day  during post natal care. 

This curry is full of flavours and seasoned with onion & ghee to give extra richness & taste. 

This  tangy, sweet and spicy curry  goes very well with hot steaming rice with any side dish. This is my favourite curry & whenever i prepare pathrade with the leaves, i dont allow these stems to go waste. 

For the post natal care , 3-4 tbsp ghee is added. Here i have used only 2 tbsp ghee while seasoning. 


RECIPE:

INGREDIENTS:

I have used 12 colocasia stems.

For masala:

  • 1 medium onion
  • 3 flakes of garlic
  • 1/4" ginger
  • 1/2 tsp pepper
  • 1/2 tsp jeera
  • 1/4 tsp coriander seeds
  • 2 cloves
  • 1/2" cinnamon stick
  • 3 red long chillies ( byadagi)*
  • Little tamarind

For seasoning:

  • 2 tbsp ghee
  • 1 small sliced onion

Apart from this little jaggery & salt to taste is needed for balancing the spices. 

METHOD:

Select fresh colocasia stems. 

Wash & clean well & peel off the fibre. 

Chop the stems into thin slices & cook in pressure cooker adding 1/2 cup water . Add salt to taste. Take two whistles. 

Allow the cooker steam to settle down. Open the lid & mash the stems with potato masher. 

Meanwhile grind all the ingredients mentioned under masala to fine paste. 

Heat 2 tbsp ghee , add sliced onion. Fry till golden brown. 

Add ground paste. Fry for 2 -3 minutes on medium flame.

Add masala water.  Boil well. 

Add boiled & mashed stems.  Add salt to taste &  little jaggery as per your choice. I prefer sweet & spicy taste.
 
Now cover & cook for 4-5 minutes. 
Delicious colocasia stem curry/ kale alu is ready. 

Serve with steaming hot rice with any side dish.

Please note:

Use only limited quantity chillies. This curry turns very spicy if extra chillies are added.
