GOAN PORK SAUSAGES/ CHORIZO


I was not a great fan of goan pork sausages but the aroma while cooking this dish made me fall in love with this yummy dish. 

These sausages are also called as 'Goan Chorizo' or linguica.

Sun-dried salted pork is seasoned with some spices ,  vinegar, local liquor & filled in the casings.  These casings are again sun dried for few days or smoked . 

These sausages are cooked in different ways but i prefer this simple easy recipe which retains all the natural flavours , taste & aroma of these delicious goan sausages. 

The preparation is simple &  easy as these sausages contain salt & all the required masala in them. This flavourful dish goes well with plain rice , chapathi , pav , sanna or dosa.

Here is a very simple , quick way to prepare these lovely sausages. 


RECIPE:

INGREDIENTS:


  • 1/2 kg  pork sausages
  • 3 medium size diced potatoes
  • 3 medium size diced onions
  • 2 medium size tomatoes diced. 
  • Pinch of salt ( only if required)

Method:


Wash these sausages well thrice as they may contain dust particles.  

Remove the skin & add the inner contents to the cooking vessel. Some use this along with skin but i prefer this way. 

Add diced potatoes , tomatoes & onion & mix well. You can also add some chopped garlic & ginger to enhance the flavour.

Cook on a medium flame till everything this well combined. No need to add any spices as it contains all the spices. You can add very little salt & few drops of vinegar if you wish.  No need to add water as the natural fats are released while cooking.

Cook for 10-12 minutes till potatoes absorb all the flavours. 


Delicious pork goan sausages are ready. 


Serve with rice or pav & enjoy with your loved ones.
