SUMMER COOL SALADS


This is my hubbys most favourite 'all in one' summer meal. 

The crispy crunchy fresh veggies with colourful fresh seasonal fruits tossed with tangy sweet & sour salad dressing makes a perfect summer cool meal. 

Added Italian herbs  and fresh greens , gives   a  perfect finishing touch to this fun meal. 

I would love to add some colourful root veggies, seasonal fresh fruits, roasted nuts, baked beans or corn, grilled chicken or fish and stir fried paneer or tofu etc, to have a complete meal. 

Handful of fresh herbs from garden such as coriander leaves, basil & mint will give classy look & perfect crunch to this  dish. 


Recipe:

Ingredients for simple salad dressing:

  • 1/2 cup olive oil
  • Juice of 1 lime
  • 1/2 tsp crushed pepper
  • Salt to taste
  • 2 tbsp honey/ brown sugar/maple syrup
  • Some Italian dry herbs

Method:

In a bowl whisk together all the ingredients and keep aside. You can even add crushed garlic, few chilly flakes & little crushed ginger too. 


You can add any other desired ingredients for this dressing. Instead of lime you can add little red wine vinegar or balsamic vinegar, some Dijon mustard or fresh yogurt/ Greek yogurt. 
To add extra nutty flavour, you can add some tahini & roasted sesame seeds too. 

Chop all the required fruits & veggies & spread in a platter. Drizzle salad dressing & gently toss. Serve immediately. 

HEALTHY CHICKEN SALAD

This is loaded with lots of fresh veggies, fruits & grilled chicken pieces and honey lemon dressing. 

CRISPY CROUTONS & TOFU SALAD

This is a mixed combo of stir fried tofu with crispy croutons, fresh veggies, fruits tossed with honey-balsamic vinegar dressing.  You can add crispy pita bread too .

BOILED EGG SALAD

Here i have added some boied eggs and stir fried paneer , tossed with creamy Dijon mustard salad dressing. Juicy cubes of watermelon & herbs gives extra richness & cool crunch to this yummy meal. 

SALAD WITH GRILLED FISH

Marinate fish with lemon juice, pepper, chilly flakes, salt , olive oil & Italian herbs. 
Grill & serve with fruit- veggies salad tossed with desired salad dressing. 

MINCED FRUITS & VEG SALAD

This is my all time favourite salad. I add all the desired veggies & fruits into the chopper & toss with Caesar salad dressing.  ( for caesar dressing whisk together Honey(optional), olive oil, minced garlic, salt, pepper, little Worcestershire sauce, Dijon mustard, little red wine vinegar)
