Instant Raw Mango Pickle


 RAW MANGO PICKLE

This is a very  easy & super tasty instant raw mango pickle recipe which reminded me my grandmother's jive alen lonche.(raw masala pickle). This pickle can be prepared quickly if done in small quantity. 

This pickle is much healthier compared to regular pickles as very less salt  and no vinegar is used in the preparation. 

This super easy raw mango pickle is prepared using just 3 ingredients for masala. 

This pickle has lesser shef life as no preservative and not much salt is used. Stays good in refrigerator for more than a month. Make sure to use good quality sour mangoes. 


RECIPE:

Ingredients:

  • 3 medium size sour raw mangoes
  • 1 cup boiled & cooled water
  • 1-2 tsp salt( as per your choice)

Ingredients for grinding:

  • 10-12 red long chillies
  • 1 tsp mustard
  • 1/8th tsp asafoetida/hing

Ingredients for seasoning:

  • 3tbsp sesame oil
  • 5 garlic cloves crushed
  • Few Curry leaves

Method:

Select good quality sour raw mangoes, 
wash thoroughly , pat dry & chop into desired pieces. I prefer skin on. You can peel the skin if you wish. Add salt, mix well & keep aside for one hour. 

Meanwhile heat sesame oil & add seasoning ingredients & fry. Cool completely. 

Dry grind the ingredients for grinding , add water released from mangoes after applying salt. 

Add extra boiled & cooled water & grind to paste.

Add ground paste to mango pieces. Mix well. 
Mix cooled seasoning to the mango pieces. 

Delicious instant mango pickle is ready. Store in a clean jar.
