Chocolate ice cream

Chocolate ice cream  I scream, you scream, we all scream for ice cream during summer season. Beat the summer heat with a nice cool treat!  Try this yummy chocolate ice cream!  This super delicious ice cream can be prepared easily with just 6 ingredients anytime and is a most enjoyable summer treat!  This is most loved by kids &  can even be used in varieties of desserts, falooda, milk shakes ,sundaes  & fruit salads. This easy ice cream is done without using any icecream maker.  Make sure to use good quality full cream milk & best quality cocoa powder.  Enjoy this wonderful frozen treat with your lovely family.  RECIPE: INGREDIENTS: 1/2.ltr full cream milk 1 & 1/2 tbsp corn flour 8 tbsp sugar 3 tbsp cocoa powder 3-4 drops of chocolate essence 100 ml milk cream or whipping cream METHOD: Add sugar, cocoa powder & corn flour to full cream milk & mix well. Start boiling on a medium flame stirring continuously.  Boil well & cool completely

AIR FRIED CRISPY BHINDI/OKRA

CRISPY BHINDI/OKRA  Crispy bhindi/okra is an ideal evening snack or an excellent side dish with dal-rice combo.  This dish is mostly deep fried or baked in oven.  Here i have prepared this dish in air fryer with only 1 tbsp oil.  This preparation is a much healthier option for health conscious  people. Make sure to use fresh tender small  size bhindi.  You can use spices according to your choice.  This  quick easy snack can be enjoyed without any guilt as it is roasted in air fryer.  You can prepare this in oven too. RECIPE: INGREDIENTS: 1st marination: 250 gms tender bhindi/okra 1 tbsp kashmiri red chilly powder 1/2 tsp coriander powder 1/4 tsp jeera powder 1/2tsp garam masala powder Salt to taste 1 tsp lemon juice 1 tsp chat masala 1 tbsp  olive oil (optional) 2nd marination: 2 tbsp besan/ 1 tbsp rice flour Method: Wash &  towel dry bhindi.  Cut both the ends & slit it into two parts lengthwise.  Add all the ingredients under 1st marination

Whole Wheat Naan

WHOLE WHEAT NAAN Naan is a leavened flatbread, usually prepared using all purpose flour and cooked in a tandoor.  Here i have used whole wheat flour to prepare these delicious naans. I prefer cooking it on a stovetop.  This can be prepared very easily with very few basic ingredients available at home.  Different types of toppings such as garlic topping, pesto topping etc., Can be used to make this dish super delicious & attractive.  Step by step recipe is mentioned below.  RECIPE Ingredients: 400 gms of wheat flour 1 egg(optional) 1/4tsp yeast Pinch of sugar Little lukewarm water 1 tsp butter Salt to taste Ingredients for topping: Few sesame seeds Coriander leaves Butter Method: Add yeast & sugar to 1 cup of lukewarm water and keep aside for 15 minutes. Add  rest of the ingredients to the Yeast water & mix well. Kneed this to a soft dough using required quantity water.  Cover and keep aside for 2-3 hours.  After 3

BUTTER CHICKEN & NAAN This is the most loved & popular dish among many of us.  Grilled chicken pieces cooked in smooth buttery gravy, served   with hot crispy naan or kulcha is one of our favourite meal. This dish is also called as murg makhani .  Butter & cream is added to give extra richness to this gravy.   The colour of the gravy depends on the colour of chilly powder used.  I prefer food with natural colours  and flavours. I never use any food colours in my recipes.  RECIPE FOR BUTTER CHICKEN Ingredients for chicken marination: 400 gms of boneless chicken pieces 1/2 cup curds 1 tsp red chilly powder 1 tbsp ginger garlic paste 1/2tsp  coriander powder 1/4 tsp jeera powder Little pepper powder Pinch of kasoori methi Salt to taste Ingredients for gravy: 1-2 tsp butter 2 medium onions chopped 5 chopped garlic cloves 1/4" ginger chopped 2 slit green chillies 2 large tomatoes chopped 1"cinnamon 3 cloves 2 bay leaves Pinch of kasoori methi 2-3 cashewnuts

SUMMER COOL SALADS This is my hubbys most favourite 'all in one' summer meal.  The crispy crunchy fresh veggies with colourful fresh seasonal fruits tossed with tangy sweet & sour salad dressing makes a perfect summer cool meal.  Added Italian herbs  and fresh greens , gives   a  perfect finishing touch to this fun meal.  I would love to add some colourful root veggies, seasonal fresh fruits, roasted nuts, baked beans or corn, grilled chicken or fish and stir fried paneer or tofu etc, to have a complete meal.  Handful of fresh herbs from garden such as coriander leaves, basil & mint will give classy look & perfect crunch to this  dish.  Recipe: Ingredients for simple salad dressing: 1/2 cup olive oil Juice of 1 lime 1/2 tsp crushed pepper Salt to taste 2 tbsp honey/ brown sugar/maple syrup Some Italian dry herbs Method: In a bowl whisk together all the ingredients and keep aside. You can even add crushed garlic, few chilly flakes & little crushed gin
