Sweet Pulao with Dates Chutney
My mom used to prepare this yummy pulao almost every Sunday & it was one of our family's favourite delicacy.
The aroma of sweet basmati rice with ghee , dry fruits & caramelized onions, takes me back to catholic wedding halls few decades ago. This dish was a must in most of the wedding menus those days .
Flavourful sweet basmati rice garnished with dry fruits, caramelized onions and served with super delicious date Chutney.
My sons love this rice & i used to prepare this often for their lunch box.
Here is a easy recipe for this delicious dish.
RECIPE:
INGREDIENTS:
- 1 Cup basmati rice
- 2 cups of water
- Sugar 3 tbsp( as per your choice)
- Salt to taste
- Few dry fruits
- Caramelized onion
For seasoning:
- 3 cardamoms
- 3 cloves
- 1 star anise
- 1" cinnamon stick
- 2 bay leaves
Method:
Soak 1 cup of basmati rice for 10 minutes, drain & keep aside.
Roast few dry fruits & 2 medium sliced onion with little ghee & keep aside.
Heat 2 tbsp ghee in a deep pan & add seasoning ingredients. Fry for 30 seconds.
Now add 2 cups of water & add salt, about 2-3 tsp sugar( as per ur taste) & allow the water to boil. Add drained rice , cover & cook for 5-6 minutes. Cover & leave aside for 5 -8 minutes.
Sprinkle roasted onion & dry fruits on top.
Serve with dates chutney.

- 1/2 boiled beetroot
- 1 ripe banana
- small piece ginger,
- 2 cloves of garlic( slightly roasted)
- 2 cloves
- small piece cinnamon
- little sugar
- 1/4 tsp vinegar
- 6-8 seedless dates
- 2 tsp raisins
- 4-5 mint leaves
- 1 small red chilly
- Salt to taste
